Just landed in Chicago after a long, but productive 🙌🏻 weekend prepping mom's house for the move‼️No time for my normal #mealprepsunday, but I definitely have time to do some snack prep when I get home. I'm making my Peanut Butter Protein Bliss Balls and YOU should too!⠀ -⠀ DO IT:⠀ 1 cup GF rolled oats⠀ ½ cup flax meal⠀ ¼ cup @nuzest_usa clean lean vanilla protein powder⠀ 1 cup dates, pitted⠀ ⅓ cup honey⠀ ¾ cup natural peanut butter⠀ -⠀ Add oats to the food processor. Pulse a few times to break down the oats.⠀ Add the rest of your ingredients and process until a dough forms. ⠀ Using your hands, roll the dough into 1 inch balls.⠀ Freeze for 30 minutes to set. Today's lunch consisted of leftover chicken breast, a measly amount of sautéed kale and part of a purple sweet potato 🙈I guess that's what you get when you clean out the fridge before leaving town. 🤷🏻♀️ - I wish I was eating THIS from @thepolentabar - a fast casual restaurant serving polenta on tap (!!) topped with all the meats, veggies, and sauces you could imagine. - If you're in the West Loop, make sure to stop in - right off the Morgan Green Line stop!
