Just arrived from Kiuchi: Awashizuku, Sparkling Sake. • The rice used for this sake is polished down to 65%. It uses an unique addition of white kōji to a 6 stage mashing process that allows it to ferment to a sparkling, refreshing sake. • The result is a highly amazing combination of sweetness balanced with white koji’s acidity. Look for it in fine restaurants/bars and retail shops!
