This is my King Prawn, Bulgur and Chard Pilaf taken from the Absorption chapter. This Turkish inspired recipe is a quick and easy meal. The chilli flakes, Isot pul biber, add a wonderful crimson fruity richness to the dish but feel free to use other types of crushed chilli if you can’t find this specific one; but use a little less as this pul biber is quite mild on the heat side of things. ⁣

Chard is great to use right now as it’s slightly older, with thicker stems, perfect for this recipe where the stalks are cooked ahead of the leaves. ⁣

In this ridiculously easy recipe, you’ll  cook a quick salted caramel sauce, before mixing in tart Bramley apples and then covering with ready made puff pastry.   • My @natoora delivery turned up. Monk’s beard, my favourite delica pumpkin, yummy looking artichokes, winter tomatoes, puntarelle and a roscoffe onions (somehow only managed to order 1 unit!). Also some lovely looking white wine vinegar and I do love my vinegars... 

I will do the pubtarelle simply with anchovy like @rachelaliceroddy posted the other day... artichokes probably just cooked and served with vinaigrette I think.

    My @natoora delivery turned up. Monk’s beard, my favourite delica pumpkin, yummy looking artichokes, winter tomatoes, puntarelle and a roscoffe onions (somehow only managed to order 1 unit!). Also some lovely looking white wine vinegar and I do love my vinegars...   • I’m officially over winter. Spring felt just around the corner the other day, but the weather today is so misty, cold and damp, it’s made me feel a bit down in the dumps. I definitely need some comfort food and, in particular, sausages! ⁣so I may just cook this one later on! ⁣

This is my sausage, lentil and fennel stew with crème fraîche and Dijon mustard taken from the absorption chapter of Foolproof One-Pot.⁣⁣

Browning sausages fully in a saucepan can be a bit of a palaver; the way they curl up and roll around is of course charming, but it makes them quite a challenge to evenly brown all the way round. So, to minimise the palaver, in this recipe, I let them brown fully in the oven once nestled amongst the lentils and vegetables like sausage icebergs. This way not only do the sausages take on a lovely dark colour and accompanying flavour, but you also get an occasional crunch from the top layer of veg and lentils, a perfect combo with the cool, silky smooth combo of crème fraîche and mustard which anoints the dish at the end of cooking. ⁣⁣

And, whilst considering this as I flicked through Foolproof One-Pot to find a recipe to post, there was one in particular that stood out for me that mirrored the day’s seasonal bridge; My Spiced Pulled Lamb Wraps with Radish and Apple Salad from the Low and Slow chapter.⁣⁣⁣

In this recipe, lamb is cooked slowly with warming spices, onion and cider, satisfying the real need still for warming comfort, whilst the salad, fragrant fresh herbs and yoghurt coupled with the DIY nature of this dish nods to the warmer (and longer) days of Spring, peppered with the first of the season’s BBQs, outdoor nibbles and al fresco sharing dishes. ⁣I can’t wait! ⁣⁣

  • Happy Sunday everyone! This is my Braised Squid 🦑  With Preserved Lemons 🍋  and Potatoes from Foolproof One-Pot. It comes from the Throw It Together chapter where all the recipes literally just need a simple mixing together of ingredients before being cooked on the hob or oven. It’s as simple as that. ⁣⁣⁣
⁣⁣⁣
When squid is slow cooked, as in this rustic recipe, it takes on a wonderful voluptuous abs luxurious, silky texture. The preserved lemons balance the punchy seafood here whilst the soft potatoes mirror the silkiness of the squid, just beginning to break up, thickening the sauce ever so slightly. ⁣⁣⁣

Serves 4⁣⁣⁣
⁣⁣⁣
100ml extra virgin olive oil ⁣⁣⁣
1 onion, finely sliced ⁣⁣⁣
6 garlic cloves, finely sliced⁣⁣⁣
5 bay leaves⁣⁣⁣
½ tsp ground coriander⁣⁣⁣
½ tsp ground turmeric⁣⁣⁣
1 sprig fresh rosemary⁣⁣⁣
60g preserved lemons, finely chopped (discard the soft internal flesh, just use the skin and pith)⁣⁣⁣
100ml dry white wine⁣⁣⁣
800g cleaned squid, cut into 1cm wide rings⁣⁣⁣
600g large potatoes (about 3-4 potatoes), peeled and cut in half ⁣⁣⁣
Salt and black pepper⁣⁣⁣
⁣⁣⁣
To serve ⁣⁣⁣
3 tbsp fresh chopped parsley ⁣⁣⁣
⁣⁣⁣
Preheat the oven to 160°C/325°F/Fan 150°C/gas mark 3.⁣⁣⁣

Add the olive oil, sliced onion, garlic, bay leaves, garlic, coriander, turmeric, rosemary sprig and ⁣⁣⁣
preserved lemons to your deep casserole pot. Give everything a good stir, separating the layers of onions and making sure everything is well blended.⁣⁣⁣

Add the wine and a generous pinch of salt and some freshly ground black pepper. Next add the ⁣sliced squid and potatoes and mix again. Cover with the lid and pop the pan in the oven for 2 hours, stirring gently a couple of times whilst it’s cooking. ⁣⁣⁣

Serve sprinkled with fresh parsley alongside plain bulgur wheat, rice or bread.⁣⁣⁣
