Get ready for Easter with a Goats Cheese Cheesecake!⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀ Buttery Biscuit Case:⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 300g digestive biscuits ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 60g butter, melted⠀⠀⠀⠀⠀⠀⠀⠀⠀ Filling:⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 300g Meredith Dairy plain chevre, softened⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 250g Meredith Dairy Sheep Milk yoghurt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 250g cream cheese, softened⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 4 tblsp honey⠀⠀⠀⠀⠀⠀⠀⠀⠀ • The seeds of 1 vanilla pod⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 tblsp lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 tsp lemon zest⠀⠀⠀⠀⠀⠀⠀⠀⠀ ________________________________________⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions:⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Preheat oven to 160oC/140oC fan forced⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Grease a 22cm diameter springform pan and line with baking paper⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. In a food processor, blend digestive biscuits and butter until the mixture resembles wet sand⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. Press biscuit mixture into the pan to form a flat base. Bake for 10 minutes and allow to cool⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5. In a large bowl, use electric beaters to bring together Meredith Dairy plain chevre, Meredith sheep milk yoghurt, cream cheese, honey, lemon juice, vanilla extract, and lemon zest. Whisk until smooth⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6. Once the pan is cool, wrap aluminium foil around the bottom and sides to make it water-tight⠀⠀⠀⠀⠀⠀⠀⠀⠀ 7. Transfer cheese filling to the buttery biscuit base and smooth out the top⠀⠀⠀⠀⠀⠀⠀⠀⠀ 8. Place cake tin inside a deep oven tray and fill the oven tray up with boiling water so that the eater extends half way up the cake pan⠀⠀⠀⠀⠀⠀⠀⠀⠀ 9. Bake for 50 minutes. Turn the oven off, open the door and leave in the oven for an additional hour⠀⠀⠀⠀⠀⠀⠀⠀⠀ 10. Transfer cheesecake to the refrigerator to set overnight. In a pinch, a minimum of 4 hours of setting will do⠀⠀⠀⠀⠀⠀⠀⠀⠀ 11. Serve the cheesecake topped with fresh berries and blueberry coulis on the side

Friday afternoon was one of the worst days we've experienced at Meredith. Dust, wind, smoke, and then heavy rain. Almost apocalyptical. . Lightning started a fire just 4km to our east, burning a pine plantation, hay shed and about 2000ha of farmland. We evacuated the cheese factory and kept a watch to the east for embers, wind change and rain clouds. . Thanks to 180 volunteer firefighters including some members of staff for fighting the flames. . The weekend had a thick earie air about and an odor of burnt bush. Our thoughts are with our neighbours who had the fire burn through their properties. . Thanks Eliza Emmlin for the photos

Although Summer coming to an end is a bit of a sad time of the year... it does mean that delicious comfort food is back on the menu! . This recipe for dauphinoise potatoes has become a family favourite - perfect for warming up after a windy day. Serve with a big garden salad and a good splash of Tobasco sauce! . INGREDIENTS: 4 cups thinly sliced potatoes (skin on) 1 cup pouring cream 1 cup milk 100-125g goats cheese (4-5 cubes) 2 tablespoons of garlic marinade 1 tablespoon all-purpose flour 1 heaped teaspoon of ground nutmeg Salt and Pepper to taste . *** If using our plain chèvre, simply substitute out the garlic marinade for 1 clove of garlic (minced), 2 tablespoons of olive oil, a sprig of thyme, and extra black pepper. . . Method: Preheat oven to 200 degrees. Thinly slice potatoes using a mandolin and lay flat into an oven-proof dish. Mix remaining ingredients together and pour evenly over the top of the potatoes. Bake for 1 hour and 10 minutes or until a nice brown crust has formed.
