Cooking is fun until it's time to clean up.😝 Enter Quick 1-pan meals, like this 15-minute Veggie Bowl. Here's how to make it: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: unrefined coconut oil or olive oil 1/2 tsp. turmeric 1/4 tsp. mustard seeds (optional) 1 clove garlic, chopped 2 tsp. ginger, chopped 2-3 Tbsp. onion, chopped 1 sweet potato, diced 1 cup beans (chickpeas, broad beans, cannelini beans, black beans, etc.), drained 1 head curly kale, stem removed and chopped small black pepper, to taste pink salt, to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Heat a pan over medium heat. Add enough oil to cover the bottom. 2. Add turmeric and mustard seeds. Cook 30 seconds. 3. Add garlic, ginger, and onion, cook an additional 1-2 minutes. 4. Add beans, sweet potato, and a pinch of salt. Stir well, let cook for 4-5 minutes until sweet potato is soft. 5. Add chopped kale and a pinch of salt. Let cook for a minute or two before stirring well, and continue cooking until all kale is wilted. 6. Add black pepper and additional salt (if needed) to taste.

My breakfast this AM: Coconut Chia Seed Pudding. Here’s the Recipe:⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 can coconut milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/3 cup chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/4 tsp vanilla (optional)⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Stir together in a glass container and refrigerate over night. What’s the healthiest restaurant cuisine? 🔸Greek or Mediterranean🔸 They typically have: 🔸plenty of veggie options (remember, at least 50% of your plate should be veggies) 🔸bean/lentil options- hello fiber! 🔸at least some wild seafood options 🔸cook with olive oil and herbs Most restaurants use vegetables oils which are 👎🏽 I believe you can make a healthy plate almost anywhere, but starting at a healthy restaurant definitely helps!
