For tonight’s 30-minute, Whole30-friendly dinner, I just shopped my pantry and freezer! # I plopped a bunch of frozen boneless, skinless chicken thighs in my Instant Pot and covered ’em with some jarred marinara sauce. I programmed the IP to cook for 15 minutes under high pressure. # Then, I chopped the woody ends from two bunches of asparagus, drizzled avocado oil on top, and sprinkled on a tasty seasoning blend. I popped the tray of asparagus in my toaster oven set to 450°F for 15 minutes. # For an additional veggie side dish, I grabbed a bag of frozen cauli rice and sautéed it in some melted ghee and some seasoning blend. # By the time the veggies were done, the chicken was finished cooking, and I released the pressure manually. I used a pair of tongs to shred the chicken and added some black garlic salt to taste. # Lastly, I arranged everything into bowls and served it to the family! We're out and about in the East Bay today so we stopped for lunch at Fremont Afghan Kabob House. Armed with my newfound knowledge that white rice spikes my blood sugar, I'm gonna concentrate on the meat and veggies. 😬#nomnompaleo
Dinner tonight was a cooking-on-the-fly Instant Pot experiment! You can watch today’s IG story to see all the details, but here’s the gist: I threw some seasoned chuck roast cubes, sautéed onion, garlic cloves, and two frozen cubes of gravy (from my Pressure Cooker Chicken and Gravy) and cooked for 35 min + natural release. Then, I added a cubed potato, chopped carrots, and a few drops of fish sauce and cooked for 5 more minutes under high pressure. While I waited for the stew to finish cooking, I roasted some broccoli, read the latest issue of People Magazine, and helped Henry put together our new Airdyne. Typical Thursday night! 😂 #nomnompaleo
