Heat to melt sugar and create a syrup. Leave to cool. In a bowl, stir in atta, grated coconut, crushed cardamom, salt and baking powder. Pour in the coconut water and melted sugar syrup to make up 250ml of liquid. Mix to form a thick batter. Heat a non-stick frying pan or tava. Pour one ladle of batter in the middle. Drizzle few drops of Cardia oil around the batter and cover with a lid. Cook the batter on medium heat until lightly browned. Flip to cook the other side. Sprinkle grated coconut and serve with jaggery or fruit puree.

For World Pasta Day, here’s an Indianised version of yummy pasta, cooked with the healthiest blended oil, Cardia Life! 1. Boil water in a large pot, add salt and pasta macaroni. Cook till al dente. 2. Heat 1 tbsp Cardia Life oil in a pan. 3. Add cumin, garlic and onions and fry until they turn pink. 4. Then add chopped veggies and fry for about 2 minutes. 5. Next mash the tomatoes well and add it to the pan along with salt. 6. Cook until the tomatoes turn soft and blend well with veggies. 7. Add kasuri methi, red chilli powder and masala powder. 8. Stir well and fry for a minute. 9. Add cooked pasta and leftover oil. Toss well. Adjust salt as needed. Add coriander leaves. 10. Serve masala macaroni pasta hot.
