Smoked Chicken is one of those incredibly simple down-home comfort foods that puts a smile on your face while you lick your fingers clean. This smoked chicken recipe is the opposite of complicated. Juicy, melt in your mouth chicken layered with flavors from the best Sweet BBQ Chicken Rub, light apple wood smoke, and a sweet/tangy Kansas City BBQ Sauce. ➖〰➖〰➖〰➖〰➖〰➖ Ingredients: ▪️1 3-4 pound whole chicken ▪️2 Tablespoons olive oil ▪️1/4 cup Hey Grill Hey’s Sweet BBQ Rub ........ ▪️1/2 cup Hey Grill Hey’s Kansas City Style BBQ Sauce ▪️2 Tablespoons honey ➖〰➖〰➖〰➖〰➖〰➖ 1️⃣Preheat your smoker to 250 degrees F. I like using a mild fruitwood like apple, but hickory or cherry also work well. 2️⃣Remove any giblets or neck from inside the cavity of the chicken. Set the chicken breast side down on a large cutting board. Starting on one side of the tail, use sharp kitchen shears to cut alongisde the spine all the way up to the neck cavity. Repeat on the other side of the spine until it is completely removed. Flip the chicken over and use the shears the cut up in between the chicken breasts to split the breast bone and cut the chicken completely in half. Dry all sides of the chicken with paper towels and make sure there aren't any dangling pieces of skin or bone. 3️⃣Drizzle the olive oil on the chicken halves and rub across the entire chicken. Sprinkle liberally with the sweet rub, but don't try to rub it in. Make sure the chicken is evenly coated on all sides with the seasoning. 4️⃣Place your chicken onto the grill grates skin side up. Close your smoker door and cook for 35-45 minutes per pound. Start checking your internal temperature at the hour mark. 5️⃣At 145 degrees F, it's time to glaze your chicken. Mix the BBQ sauce with the honey and brush all over your chicken. Increase the heat in your smoker to 300 degrees F. 6️⃣Cook for an additional 15-20 minutes, or until the internal temperature in both the breast and the thigh reads at least 160 degrees F. Watch during this time period that the glaze doesn't burn. 7️⃣Remove the chicken halves to a large platter or cutting board and let it rest for 10 minutes before slicing and serving.

Kansas City Style BBQ sauce is the perfect balance of sweet and tangy. Rich from the molasses, bright from the acidic tomatoes and vinegar, and just the right amount of heat from the chili powder. ➖▪️➖▪️➖▪️➖▪️➖▪️➖ Ingredients: ◽️14 oz can crushed tomatoes ◽️1 cup ketchup ◽️3/4 cup brown sugar ◽️1/2 cup apple cider vinegar ◽️1/2 cup molasses ◽️1 Tablespoon smoked paprika ◽️1 Tablespoon salt ◽️2 teaspoons ground black pepper ◽️1 teaspoon chili powder ◽️1 teaspoon garlic powder ◽️1 teaspoon onion powder ◽️1/2 teaspoon red pepper flakes ◽️1/2 teaspoon ground mustard ➖▪️➖▪️➖▪️➖▪️➖▪️➖ Instructions: 1️⃣Combine all ingredients in a medium saucepan. Whisk to combine. Bring to a boil and then reduce the heat to a simmer. Simmer for 20 minutes. Allow to cool completely before transferring to an air tight container. 2️⃣Refrigerate overnight for best flavor. Skillet Bacon Apple Crisp ➖✖️➖✖️➖✖️➖✖️➖ Instructions: 🔹Apple Filling 4 lbs crisp apples peeled, cored, and cut into 1 inch pieces 2 Tablespoons flour 1/2 cup dark brown sugar 1 teaspoon lemon zest 1 teaspoon cinnamon 1/2 teaspoon freshly grated nutmeg pinch of salt 🔹Crisp Topping 4 strips bacon cut into small pieces 1/2 cup instant oats 1/2 cup flour 1/2 cup granulated sugar 1/2 cup dark brown sugar 8 Tablespoons cold salted butter cut into very small pieces 🔹Salted Bourbon Caramel 1 cup granulated sugar 1/4 cup water 1 cup cream 1 Tablespoon bourbon pinch of salt ➖✖️➖✖️➖✖️➖✖️➖ Instructions: 1️⃣Preheat a 12 inch cast iron skillet to high and cook the bacon pieces until crisp. Remove the cooked bacon and drain most of the bacon fat from the pan, reserving about 1 Tablespoon in the pan. 2️⃣Preheat your grill to 375 degrees and fill your smoker box with apple chips. While your grill heats, start assembling ingredients for the crisp. 3️⃣In a large bowl, combine the apples, flour, brown sugar, cinnamon, nutmeg, lemon zest, and salt. Stir gently to combine and pour into the skillet with the bacon fat. 4️⃣In another bowl, mix the bacon pieces, oats, flour and sugars. Stir in the cold butter pieces with a fork, pressing on the butter and mixing until the butter is in small pieces and the topping mixture resembles coarse sand. Sprinkle the mixture over the apples. 5️⃣Place the skillet on the side of your grill without direct heat, close the lid and cook for 40-45 minutes (turning the skillet halfway through cooking) or until the apples are tender and the crisp topping is golden brown. 6️⃣While your crisp bakes, prepare your salted bourbon caramel sauce. In a medium saucepan over medium heat, simmer the water and sugar together, no need to stir- just swirl the pan, until it turns a warm amber color, about 15 minutes). Turn off the heat and stir in the heavy cream. The caramel with bubble up, so stir quickly. Pour in the bourbon and salt and stir to combine. Set aside to cool slightly until the crisp is done. 7️⃣When the crisp is finished, serve with vanilla ice cream and the warm salted caramel.
