Ever wondered how we create our pure wild spirit? Foragers search the forests of northern Europe for wild birch trees in early spring after the winter thaw and carefully tap the trees, drawing out pure birch sap. The sap is frozen to retain both freshness and full flavour and the trees are left to continue their growth until the next year.

#FREYAFRIDAY Blushing Milkmaid | 50ml Freya Birch Spirit, 3 bar spoons of whole milk yogurt, 0.5 Vida Mezcal, 15 ml sugar syrup, 2 drops of salt solution. Coat the inside of the glass with blackcurrant jam using a brush. Shake with ice and dry shake without. Top up with Prosecco. Garnish with a slice of Old Ford goat cheese.
