It is said that there are two types of aging that we are susceptible to: Inevitable aging and Accelerated aging. While they both sound terrible, it isn't all doom and gloom • First, the bad news. B U T T E R • spend any amount of time in France and you will no doubt come across the wonder that is French produced butter. The cheese is of course divine and the butter is well... otherworldly. We have all tasted butter before but somehow- whether it be the pedigree of the cows, the quality of the grass they feed on or the pastoral setting of it all, the quality of the butter here is amazing and so different from that found elsewhere. Take a look around you in any given café or sidewalk bistro and you will find that everyone seems to agree. It is eaten with zeal and protected almost as a national treasure. And yet there is not the problem with obesity and heart disease that is so prevalent in the west. While the French habit of consuming a high fat diet used to both irritate and confuse us, what was once viewed as a The French Paradox is thankfully no more • long demonized by the establishment, saturated fat and even cholesterol is experiencing a renaissance. And not a moment too soon. Not only does fat satiate us and keep us from eating more than we need to they are critical for us in terms of nutrition.
