Although all of our loaves are made with a 100+ year-old sourdough starter, our sourdough loaf (surdejsbrød) contains more sourdough than all of the others. We use a Biga sourdough to give this loaf a more elastic texture and slightly sour taste. It works perfectly as a base for our smashed avocado with poached eggs.
