Almost all our guys at The Coconut Club have attended the HSBC Rugby 7’s over the last 3 years. It’s a rare team building moment for us as we open 7 days a week and we don’t always get the time to spend an afternoon having fun together. But the coolest thing that happened yesterday was having our Executive Chef, Hendra, leave us at 5pm for the Indonesian Embassy to vote for this year’s Presidential Elections! This power photo he took shows us his dedication both to his work and to his country! FYI he had to wait it out in a 2000 person queue sia!
Otak Master Wak is a man so vibrant and incandescent he can only be looked upon once in a while and only in black and white like how one may gaze upon the sun during an eclipse. He prepares our fish with the same respect an undertaker has for the dead bodies that pass through his mortuary. He may never have met them before but he knows they have been loved. The flesh, stripped from their skeleton is pounded with his bare fists till it has the texture of an overweight baby. He adds the fish meat together with his custom made spice paste into a steel bowl that is magically un-stainable. He mixes the ingredients by moving his gloved hand in a J shape while his other hand rotates the bowl in an anti-clockwise motion, his body rocking back and forth like Michael Jackson in a scene from thriller. Finally he prepares the packets of this magical mixture with finely steamed banana leaves so when you unfold them, they open like the perfectly formed lapels of a Giorgio Armani suit. Master Wak. Shokunin or madman? Cook or artist? These are questions only a person paid for the length of their Instagram posts and not the quality of them will ask.

Diwali is known as the festival of lights but many of us may have never asked what the significance the lighting of the candles means. The epic poem, Ramayana, describes the story of Surpanakha, sister of Ravana, the demon King of Lanka, who when wandering in the Panchavati Forests meets Lord Rama, the 7th avatar of the God Vishnu. Upon meeting him, Surpanakha immediately proposes to Rama that she marry him. But Rama, already being married to the beautiful Sita recommends she propose to his brother Lakshmana. But Lakshmana is also married. The 2 brothers decide to make fun of Surpanakha and when she gets fed up the brothers decide to cut off her nose and ears. . Mutilated, Surpanakha, goes back to her brother King Ravana to tell him what had happened. King Ravana plots revenge and kidnaps Sita and takes her back to Lanka and keeps her captive for a year. King Ravana expresses his desire for Sita, however Sita refuses his advances and manages to remain chaste throughout her captivity. Lord Rama and Lakshmana want to rescue Sita, but having no resources they form an alliance with the monkey Hunaman. Together they amass an army of monkeys and bears to wage war on King Ravana. They built a bridge from what is now India to Sir Lanka and battled King Ravana for 13 days, eventually defeating and killing him. . After the battle, candles were lit, not just as a celebration for the victory but to help Lord Rama and his rescued wife Sita find their way back to their kingdom of Ayodhya. And this is why Diwali is celebrated as the festival of lights. More importantly, Diwali is about the struggle between good and evil within each person and that each person is capable of being good to one while being evil to another. Mr. Chew, a semi homeless man who spends his days at the back alley of our restaurant, has been around for years. He’s kind of a guardian for us, chasing away unscrupulous folks trying to steal our oil or shooing off those who would dump their garbage in our bins. He’s helped out a lot by the community and he doesn’t have to collect so much cardboard anymore. But he is still very attached to the trolley that served him well through all the years. . Over the last few weeks he’s converted the trolley to a kind of moveable garden with proper flower beds and a herb garden. The back panel of the trolley is a magical tapestry of plastic twine that morphs continuously between scenes conceived by an unrestrained imagination. We have so much respect for Mr. Chew. Even with nothing he makes the effort to help those more fortunate than him. Hari Raya Haji is one of the most meaningful days of the year for Muslims as it marks the end of The Hajj – the pilgrimage to Mecca where every able bodied and financially capable Muslim is obliged to make at least once in their life. During this period we celebrate the values of charity, forgiveness and sacrifice. Intrinsic to this celebration is the story of Ibrahim and Ismail and of the Prophet Mohamed’s journey to the Holy Land where he delivered his final sermon on the plains of Arafat, declaring that he had fulfilled his purpose to deliver Allah’s message. . Through his willingness to sacrifice himself, Ismail has become one of the most prominent models in the Quran of hospitality and obedience. And though I sometimes find it hard to connect to the values the Quran teaches us through these examples in history, I can sometimes relate to them through my work here and my everyday experiences. It’s not so much that I learn about obedience to my bosses or to the restaurant but more obedience to my own values. . Above are just some of the people I work with. If you ever wondered what it’s like to work at The Coconut Club here’s a farewell post from our sadly missed Sharon Phua 😪 .................. Yesterday was my last day at @thecoconutclubsg, but the memories created in the past 1.5 years will always be etched in my mind. It was the place where I had my brightest smiles and my saddest tears. The people there were from diverse backgrounds, and yet we became a family, an imperfectly perfect one I would say. It was my home away from home. I was given the chances that most people wouldn't get as I got to work with my best friend @wecrossedpaths and my love @tanuzen. I even had the opportunity to serve @leehsienloong and other SG ministers as well as President Duterte and other delegates from overseas. . I'm also lucky to have had bosses who cared about my feelings and acknowledged the efforts I put in at work. They didn't treat me as an employee, they saw me as their friend. I also had a great A Team, my managers @nicholasmathias @aytwozee Syah and fellow supervisors @lutfi.hzq @oganjashan who I could always count on. The Coconut Club is a place where my friends and family could gather for a simple meal and more importantly for a good time. They always enjoyed themselves even if it was just over a simple plate of nasi lemak. I guess the most important thing is that I acquired skills that I wouldn't have learnt if I was bounded to a desk. In truth, I came to The Coconut Club as just a mere waitress who had no clue about F&B operations. But I grew into someone who my bosses and managers could entrust the whole restaurant to and allowed me to run the show. There were times I had to make impromtu decisions on my own and I'm thankful for the FOH and Kitchen staff for not doubting me and trusting that what I decided is best for everyone. Another takeaway would be the friends I made over the year. Some I'll see 3-4 times a week and now I'm not gonna see them at all in a week 😭 But this isn't good bye, just a see you later because I know I will be back somehow someday. “Learn how to clean before you learn how to cook,” said his mother. . We spend a lot of time cleaning our kitchen at The Coconut Club, about 300 man/woman hours a month. It’s cleaned twice a day, once after each service and we have a 3 hour deep clean every Sunday. The Sunday clean looks like any other day’s clean at first. The big oil pans and stove tops come out. They’re scrubbed and soaped till they’re spotless. One cook will be finishing off the remaining dishware and glassware from service. Another cook will be cleaning the fryer baskets while the fourth cook starts putting away all the food to be kept for the next day. . Everything starts to look messier for a while. But after all the small things are cleaned and put away, our cooking equipment gets pulled away from the wall and we start going behind them to clean the back of the equipment as well as the tiled walls. Someone will start pulling apart the exhaust to start cleaning the grills. Another will start removing all the plates on the pass so he/she can start cleaning the glass shelf. . At this point the kitchen is literally cleaned from the top to bottom. Fridges are emptied, soaped and sanitized. The pipes under the sinks are dismantled so we can attack the germs at every nook and cranny. We throw buckets of water on the floor to push all the remnants of food into the drain then the floor is soaped and scrubbed. One of the last things to be washed is the dishwasher and then the drain. We get on our knees and start scrubbing the longkang from the far end all the way to the drain hole. Finally the floor is wiped dry. A cigarette is lit, a beer is poured and the week is finally over. The exhaustion sets in and we think about the 14 hours we have left before the next service. This is the hand of Sharifah who just joined us today. She is removing 1g of rice so it's 5000g and not 5001g. . The hardest part about being a cook at The Coconut Club? Making the best Nasi Lemak we can 500x a day. For the cook it's 500 plates but the customer only sees 1. One egg without crispy sides means we failed that one customer. 1 chicken leg with slightly too little salt and it's tasteless for that 1 customer. . Akan Datang : Ayam Botok . Shallots, garlic, turmeric, galangal, ginger, chilli, kencur, candlenut, lemongrass, coriander seed, lada puteh, daun salam, kemangi, kaffir lime, santan & 1 whole chicken. . Non-stop pound coriander seed and white pepper. Make a rempah by blending together everything except the 3 leaves and lemongrass. Fry the rempah in an ungodly amount of oil, kampung style, together with the daun salam, lime leaf and lemongrass until fragrant (honestly I've always felt the description fry until fragrant totally useless. What kind of fragrance???!!!! Is it the fresh fragrance or the deep earthy fragrance? Why can't just give timing?) . Add chicken parts and stir for a few mins then remove and chargrill chicken till kena the black black. Then add back in wok with sauce, add santan, a little water and finish cooking till chicken is tender then toss in kemangi for final touch. Oh shit salt! Ok throw away start all over again and add salt a little at a time throughout the cooking process. Remove chicken from wok and plate. Finally spend an hour taking photos for Instagram. . Happy International Women's Day! Last year we gave out free cendol & kuih to each of our female customers in celebration of IWD. It may have been just a small token of appreciation but what's more important is the work that we do behind the scenes throughout the year. We put in a lot of effort to make sure we have a safe working environment that is free of harassment of any kind. We found it difficult because a lot of misogynist behaviours have become normalised in our society. It took effort to look into ourselves to see the changes we needed to make but we did it together. We spent a lot of time discussing with our male and female staff about what kind of environment they wanted to work in. What kinds of behaviours were ok and what kind of language was ok to be used. We now give all new staff a code of conduct pamphlet that details information on what constitutes harassment, who they should speak to if they experience any kind of harassment and contact information of a third party hotline should they feel uncomfortable talking to any of our staff. . I won't lie, we've had issues with harassment over the year but we shut it down fast because our female staff know where we stand on these matters and feel comfortable to bring it up to management. Even though a kitchen is usually a machismo filled environment, almost 50% of our cooks are women. In the FOH its probably 70%. So women are fully involved in driving our food and service. . We still have a long way to go though. Women are still underrepresented at the management level in our restaurant. It's an important issue to us and we need to ensure that women have not just pay parity but occupational parity as well. . The UN's theme this year is Press For Progress. And that's exactly what we're gonna do. We may be just a Nasi Lemak restaurant but we got big ideas and changing the world around us for the better is a big goal for us. People have asked us if we eat Nasi Lemak everyday. Yes we do. Well almost everyday. Some just have cendol for lunch. But really for us the definition of Nasi Lemak is pretty broad because it's more of a cuisine than a dish. So we're eating Nasi Lemak everyday but in different forms. . Today's staff lunch : Burung Puyuh Goreng with Sambal Hijau. . We pounded turmeric, garlic and toasted coriander seeds into a paste we used to marinate the quail. It's been an interesting week since we stopped using plastic straws at The Coconut Club. We've been accused of being ridiculous, lazy and thoughtless. One customer said that it was outright bad service and it was cost cutting under the guise of environmentalism. Another said that he needed a straw because he was OCD, but then went on to drink directly from his water glass. . But it's heartening to know that 99% of our customers understand and support us in reducing unnecessary waste. Usually it takes a prompt or two about how no one uses straws at home or that we are happy to provide a straw if they really insist (we're keeping our existing straws around for older folks or young children who require them and are looking for a good paper straw alternative right now). . But what seems to work the best is when our manager Syah asks our customers if they love turtles. He then stares at them with his forlorn turtle face and they always relent. . The best consequence of this whole exercise is that our staff have slowly started to question other parts of our operation and each day we make these small decisions that reduce our waste just a tiny bit. We still use plastic all over the place, like our takeaway bags and our da bao boxes. It'll take time to find suitable alternatives while calculating how much of the cost we can absorb. . Who knows how far we can take this, in restaurants disposability and hygiene are intertwined. But with your continued support we're gonna stick on this path for a while. . Anyways, Happy Sunday! Vitiraa doesn't follow Uncle Bernard's formula when she makes kopi. She goes her own way. Trained on the foothills of the Himalayas under the great Yogi ChanraiDoctorlee, Vitiraa has the magical ability to turn hot water into not just kopi and teh, but also milo. Above is a video of Vitiraa tariking the kopi. But her hands are moving so fast they appear to be still. Her kopi, famed throughout the Sister's Islands, is made from butter roasted beans that she grinds into a powder so fine they will slip through the deep-seated cultural issues of the SMRT. The water she uses is defined by Merriam-Webster as the clear liquid that has no colour, taste or smell, that falls from clouds as rain. To finish her kopi she uses 2 kinds of milk. One is evaporated by some method incomprehensible to us, the other is milk condensed by time itself! You won't get Vitiraa, or Uncle Bernard, making kopi for anyone else. Starting tomorrow The Coconut Club is releasing a new version of our beloved Lemongrass Tea! Here in the photo we have both the old and the new versions, can you tell the difference? One of them is a beautifully refreshing thirst quencher with herbaceous lemongrass notes and a dash of lime. The other adds to the 500 million un-recyclable straws that are used each day around the world. As much as we think these drinks are better enjoyed with a straw, the image of them piled up in landfills, floating around the oceans or incinerated to release hydrocarbons into the air leaves a sour taste in our mouth. We're sure you'll support us in our endeavour to move towards a more sustainable future. It's been a while since we've done a staff profile. We've been busy. After the break we thought there could be no better person to introduce to you then Ina. The warmth, love and perseverance that Inah possesses makes her one of our most valuable resources. Adding value to not just food quality but also to staff morale is the exact reason she rose from the lowest Commis when she started to one of the highest positions in the kitchen in just a few months. As one of our few Malaysians working with us she definitely represents! We discovered all her qualities when on one of our busiest nights, with 2 cooks down, she owned not just her station but 4 stations all at the same time. We knew then she was a hero. She is employee of the month. She is a force to reckon with. She puts the Inah in Ribena. Thanks Inah.
