Latest News from Coconut Press 🥥 Tomorrow, on the 10th of October, The Coconut Club will be celebrating their 3rd Birthday at 28 Ann Siang Road. They’re going to be serving nasi lemak, old school style. If you’re not sure what that means, you just gotta come down and check it out! feat. the cutest chefs in Ann Siang, Mas Hendra 👨🏽🍳and Alfian 👨🏽🍳
Our sister restaurant, Belimbing Superstar, will be opening tomorrow. It’s been a long journey helping Chef Ben Teo open his dream Peranakan Restaurant. The Coconut Club moved so he could take over our original place and we hope you’ll give him the same love and support you’ve given us over the last 3 years. He’s pulling out all the stops, serving Chye Png style, all the dishes he’s learnt as a child and over his long career as a chef. He’s worked with other Peranakan chefs and a few home cooks to bring a menu that’s more than just one one person’s vision, it’s an expression of Peranakan cuisine new and old. @belimbing.superstar
Family meal at The Coconut Club. It’s been a crazy first 7 days so we treated ourselves to incredible North Indian food by the one and only Shahi Maharani! We don’t do this often, usually it’s left over Nasi Lemak. But hey after 3 years of eating our own fried chicken sometimes we gotta switch it up! . . #nasilemak #cendol #shahimaharaninorthindianrestaurant
The new Coconut Club is at 28 Ann Siang Road just up the hill from our old location. We’ve added a whole bunch of seats and changed our service style: plating our food closer to you and cooking Padang style so you don’t have to wait too long for food. This pretty much means the queue time is shorter. We’ve added loads of new dishes that represent all the regional Malay dishes that our staff have been enjoying in their own homes. So come join us: new place same old faces! . . #coconutclubsg #sgfood #annsianghouse #nasilemak #cendol
We’ve been in a bit of a jimebadesh recently but things are looking good. Are you here? Are you there? Saw the new sign up the road! The meal is on the house? Did someone say Belimbing? There’s been confusion, befuddlement and maybe straight out mobocracy. But in a few days everything will be clear. Life will continue, with one Nasi Lemak at a time. And maybe, just maybe there’ll be a sliver of deep fried air dried spice rubbed Paru at the end of it all. . #thecoconutclubsg #nasilemak #cendol #parubelado

It was unbelievable for us to meet Massimo Bottura & Joan Roca in the flesh at “The World’s 50 Best Restaurants” launch party @TanjongBeachClub earlier this week. We feel so lucky that at The Coconut Club we’ve managed to assemble a team that aspires to hone their craft on one of Singapore’s own dishes, Nasi Lemak. And it’s because we intend to always keep the dish within the context of Malay culture that Massimo & Joan’s efforts in their own cuisines have been a source of great inspiration for us. None of us at The Coconut Club have ever eaten their food and in a way we have only admired them for their reputation but after meeting these 2 great chefs we realised that what moves us is not just their dedication to their craft or their culture but their dedication to support others in the industry like ourselves and the humility that they bring to that endeavour. In a month The Coconut Club will be moving to a new location just up the road from us. We’re updating our Nasi Lemak to be even more traditional, if that even makes sense. Hopefully by next year we’ll be included in “The World’s 100,000 Best Restaurants.” . . . #worlds50best #massimobottura #joanroca #indaflesh #thecoconutclubsg #nasilemak #cendol #loandbeholdgroup #fanboy #fangirl
Here we are cooking for The World’s 50 Best Restaurants launch party! Although we have spent the last 2 1/2 yrs workin’ hard perfecting our craft at Nasi Lemak, our stall here @Tanjongbeachclub is right next to legends like #kekseafood & #mrmoghanprata who have been doing this for over 20 years. In 30 mins some of the world top chefs will be tasting our Nasi Lemak. You can’t imagine the feeling we have after 2 years of hard work to go from neighbourhood restaurant to sharing our cuisine with the world. Our Nasi Lemak does not by far represent the entirety of tastes and flavours of how this one dish is expressed in our little island so we’re super stoked to be here. We could never have done it without all the support of our customers and all the people that believed in us over the years. So we thank every one of you for giving us this amazing opportunity - to cook what we love to eat on a beach on a Monday with the waves crashing behind us and the smell of fried chicken in our hair. Super big thanks @lobeholdgroup for making it all happen and #worlds50best for coming to Singapore! . . #thecoconutclubsg #nasilemak #cendol #kuihmuih
#Repost @theworlds50best . After being in inspired by the diverse and delicious flavours of a nasi lemak convention in Kuala Lumpur, the team from Coconut Club decided that they should bring back to Singapore the same passion for the dish. They spent two years developing recipes and an equal amount of time sourcing the best coconuts in the world. Today, The Coconut Club is a hip maverick nasi lemak speciality restaurant and will be serving their tasty dishes during the Chefs Feast celebration at Tanjong Beach Club for The World’s 50 Best Restaurants 2019. #Worlds50Best #Celebration #Singapore #Hawker #HawkerStall #Foodie #Travel #Coconut #NasiLemak @visit_singapore @tanjongbeachclub @thecoconutclubsg
We’ll be taking a little break on the 4th and 5th June to balik Kampung and stuff our faces with food! We'll be back in action on June 6th from 11am - 3pm and 6pm - 9:30pm, Eid Mubarak to all our Muslim friends! ☺️
Almost all our guys at The Coconut Club have attended the HSBC Rugby 7’s over the last 3 years. It’s a rare team building moment for us as we open 7 days a week and we don’t always get the time to spend an afternoon having fun together. But the coolest thing that happened yesterday was having our Executive Chef, Hendra, leave us at 5pm for the Indonesian Embassy to vote for this year’s Presidential Elections! This power photo he took shows us his dedication both to his work and to his country! FYI he had to wait it out in a 2000 person queue sia!
Otak Master Wak is a man so vibrant and incandescent he can only be looked upon once in a while and only in black and white like how one may gaze upon the sun during an eclipse. He prepares our fish with the same respect an undertaker has for the dead bodies that pass through his mortuary. He may never have met them before but he knows they have been loved. The flesh, stripped from their skeleton is pounded with his bare fists till it has the texture of an overweight baby. He adds the fish meat together with his custom made spice paste into a steel bowl that is magically un-stainable. He mixes the ingredients by moving his gloved hand in a J shape while his other hand rotates the bowl in an anti-clockwise motion, his body rocking back and forth like Michael Jackson in a scene from thriller. Finally he prepares the packets of this magical mixture with finely steamed banana leaves so when you unfold them, they open like the perfectly formed lapels of a Giorgio Armani suit. Master Wak. Shokunin or madman? Cook or artist? These are questions only a person paid for the length of their Instagram posts and not the quality of them will ask.
Public Announcement 4819. We have had a sudden surge in customers over this last week and have been working hard to keep up. Over the last couple of years we have had to throw away thousands of kilos of food for quality and safety reasons. In this world that we live in now it just feels unconscionable to operate our business in this manner, that for the sake of profit we manage food supplies in a way that maximises our revenues but distorts market efficiencies in our food economy that creates this unnecessary burden on our planet. We have a new system now and hopefully it works a little better than the last one!
Afiq always makes it nice. He already makes the best cendol in the kitchen. And his staff meals are legendary. From Ayam Kicap to his Masak Lemak Labu, everything he makes is so god damn tasty. And it’s not just tasty, it’s comforting and soothing and it licks your body from the inside. You guys get to eat Nasi Lemak from 11-3. But the real magic happens when the doors are closed and Afiq works the stove to cook for his mates. You’re gonna be tasting some of his home cooked meals soon enough so stay tuned! . . #makeitnice #homecooking #bringingitback #thecoconutclub
Imperfection is the root cause of weight gain where we work. This summer the new Coconut Club will open. One of the dishes we’ve been working hard at is this beauty right here. Beef short ribs are poached in a court-bouillon of pastes and spices till the meat almost falls off before it’s slapped on a charcoal grill with loads of butter. Once a year, just 4 days before the start of the winter solstice, the sun will pass over The Coconut Club and for 15 secs its rays will pass through a tiny window in the roof of our kitchen and hit this tray of chicken with all its solar glory, warming it to perfect crispness and adding the flavour of the cosmos. This tray, placed here precisely for this event, is meant for only 4 of our guests a year. Diwali is known as the festival of lights but many of us may have never asked what the significance the lighting of the candles means. The epic poem, Ramayana, describes the story of Surpanakha, sister of Ravana, the demon King of Lanka, who when wandering in the Panchavati Forests meets Lord Rama, the 7th avatar of the God Vishnu. Upon meeting him, Surpanakha immediately proposes to Rama that she marry him. But Rama, already being married to the beautiful Sita recommends she propose to his brother Lakshmana. But Lakshmana is also married. The 2 brothers decide to make fun of Surpanakha and when she gets fed up the brothers decide to cut off her nose and ears. . Mutilated, Surpanakha, goes back to her brother King Ravana to tell him what had happened. King Ravana plots revenge and kidnaps Sita and takes her back to Lanka and keeps her captive for a year. King Ravana expresses his desire for Sita, however Sita refuses his advances and manages to remain chaste throughout her captivity. Lord Rama and Lakshmana want to rescue Sita, but having no resources they form an alliance with the monkey Hunaman. Together they amass an army of monkeys and bears to wage war on King Ravana. They built a bridge from what is now India to Sir Lanka and battled King Ravana for 13 days, eventually defeating and killing him. . After the battle, candles were lit, not just as a celebration for the victory but to help Lord Rama and his rescued wife Sita find their way back to their kingdom of Ayodhya. And this is why Diwali is celebrated as the festival of lights. More importantly, Diwali is about the struggle between good and evil within each person and that each person is capable of being good to one while being evil to another. It is a reminder to us that it is the choices we make throughout our lives that move us closer to one or the other. . 📷: Depiction of Lord Rama and the Monkey Chiefs, British Museum . . . #diwali #goodoverevil #knowledgeoverignorance #loghtoverdark #indianfestivals #diwalisg #deepavali #ramayana #india #srilanka

Mr. Chew, a semi homeless man who spends his days at the back alley of our restaurant, has been around for years. He’s kind of a guardian for us, chasing away unscrupulous folks trying to steal our oil or shooing off those who would dump their garbage in our bins. He’s helped out a lot by the community and he doesn’t have to collect so much cardboard anymore. But he is still very attached to the trolley that served him well through all the years. . Over the last few weeks he’s converted the trolley to a kind of moveable garden with proper flower beds and a herb garden. The back panel of the trolley is a magical tapestry of plastic twine that morphs continuously between scenes conceived by an unrestrained imagination. We have so much respect for Mr. Chew. Even with nothing he makes the effort to help those more fortunate than him. Living in a situation where almost all of us would find despair, he finds dignity and purpose. . . . #whereisthesafetynet #homelessinsg #singaporeart #nationalartscouncil #community
Selamat Hari Raya Haji from all of us at The Coconut Club! . Hari Raya Haji is one of the most meaningful days of the year for Muslims as it marks the end of The Hajj – the pilgrimage to Mecca where every able bodied and financially capable Muslim is obliged to make at least once in their life. During this period we celebrate the values of charity, forgiveness and sacrifice. Intrinsic to this celebration is the story of Ibrahim and Ismail and of the Prophet Mohamed’s journey to the Holy Land where he delivered his final sermon on the plains of Arafat, declaring that he had fulfilled his purpose to deliver Allah’s message. . Through his willingness to sacrifice himself, Ismail has become one of the most prominent models in the Quran of hospitality and obedience. And though I sometimes find it hard to connect to the values the Quran teaches us through these examples in history, I can sometimes relate to them through my work here and my everyday experiences. It’s not so much that I learn about obedience to my bosses or to the restaurant but more obedience to my own values. . Above are just some of the people I work with. Every single one of them in some form or another has reminded me of these same values we celebrate today. It has taken a lot for us to stay together as a team and this is the 2nd Hari Raya Haji that we have celebrated together and we wouldn’t have made it this far without each other and the values that we share. . If you ever wondered what it’s like to work at The Coconut Club here’s a farewell post from our sadly missed Sharon Phua 😪 .................. Yesterday was my last day at @thecoconutclubsg, but the memories created in the past 1.5 years will always be etched in my mind. It was the place where I had my brightest smiles and my saddest tears. The people there were from diverse backgrounds, and yet we became a family, an imperfectly perfect one I would say. It was my home away from home. I was given the chances that most people wouldn't get as I got to work with my best friend @wecrossedpaths and my love @tanuzen. I even had the opportunity to serve @leehsienloong and other SG ministers as well as President Duterte and other delegates from overseas. . I'm also lucky to have had bosses who cared about my feelings and acknowledged the efforts I put in at work. They didn't treat me as an employee, they saw me as their friend. I also had a great A Team, my managers @nicholasmathias @aytwozee Syah and fellow supervisors @lutfi.hzq @oganjashan who I could always count on. The Coconut Club is a place where my friends and family could gather for a simple meal and more importantly for a good time. They always enjoyed themselves even if it was just over a simple plate of nasi lemak. I guess the most important thing is that I acquired skills that I wouldn't have learnt if I was bounded to a desk. In truth, I came to The Coconut Club as just a mere waitress who had no clue about F&B operations. But I grew into someone who my bosses and managers could entrust the whole restaurant to and allowed me to run the show. There were times I had to make impromtu decisions on my own and I'm thankful for the FOH and Kitchen staff for not doubting me and trusting that what I decided is best for everyone. Another takeaway would be the friends I made over the year. Some I'll see 3-4 times a week and now I'm not gonna see them at all in a week 😭 But this isn't good bye, just a see you later because I know I will be back somehow someday. Yours always, Sharon, the Mother of Coconut Club PS. Remember to keep hydrated during service and always shout BEHIND and don't make me worry pl

“Learn how to clean before you learn how to cook,” said his mother. . We spend a lot of time cleaning our kitchen at The Coconut Club, about 300 man/woman hours a month. It’s cleaned twice a day, once after each service and we have a 3 hour deep clean every Sunday. The Sunday clean looks like any other day’s clean at first. The big oil pans and stove tops come out. They’re scrubbed and soaped till they’re spotless. One cook will be finishing off the remaining dishware and glassware from service. Another cook will be cleaning the fryer baskets while the fourth cook starts putting away all the food to be kept for the next day. . Everything starts to look messier for a while. But after all the small things are cleaned and put away, our cooking equipment gets pulled away from the wall and we start going behind them to clean the back of the equipment as well as the tiled walls. Someone will start pulling apart the exhaust to start cleaning the grills. Another will start removing all the plates on the pass so he/she can start cleaning the glass shelf. . At this point the kitchen is literally cleaned from the top to bottom. Fridges are emptied, soaped and sanitized. The pipes under the sinks are dismantled so we can attack the germs at every nook and cranny. We throw buckets of water on the floor to push all the remnants of food into the drain then the floor is soaped and scrubbed. One of the last things to be washed is the dishwasher and then the drain. We get on our knees and start scrubbing the longkang from the far end all the way to the drain hole. Finally the floor is wiped dry. A cigarette is lit, a beer is poured and the week is finally over. The exhaustion sets in and we think about the 14 hours we have left before the next service. Cause come Monday morning at 11am we will hear the familiar sound of Syah’s voice, “4 Nasi Lemaks, 1 Long Bean, 1 Sambal Sotong, Fast Fast!” . . . #spickandspan #lightattheendofthetunnel #thecoconutclubsg #nasilemak #cendol #cleanfreak #nomnom #sgeats

At The Coconut Club we dedicate our lives to cooking the national dish of Singapore and Malaysia. Nasi Lemak is one of the special things we share as a people. But there is something way more important that we share, the right to vote in a free election. This is the hand of Sharifah who just joined us today. She is removing 1g of rice so it's 5000g and not 5001g. . The hardest part about being a cook at The Coconut Club? Making the best Nasi Lemak we can 500x a day. For the cook it's 500 plates but the customer only sees 1. One egg without crispy sides means we failed that one customer. 1 chicken leg with slightly too little salt and it's tasteless for that 1 customer. . At $12.80/plate expectations are super high and we strive to meet those expectations at every single service. Sometimes we fail. But sometimes we surpass those expectations and that becomes the new minimum standard. And that's our labour of love.
