This is my Lemon Scented Pork Meatballs with Fennel and White Wine taken from the pot bake chapter in my new book. This recipe is probably the one that gave me the most challenges during development which @inga.mink and @asausagehastwo know only too well! How many breadcrumbs to add, what meat to use, how long to roast the veg before the meatballs go on top, how long to roast the balls for, when’s best to add the wine?... etc etc.... it was rather a lengthy process! But I got there in the end. ⁣⁣

I discovered this delicious pancake 🥞 on a food tour of George Town in Penang. What a treat, even in the fierce heat of the day, to be taken to this famous food vendor, selling the most sublime thick fluffy pancakes filled with butter, peanuts and sugar. ⁣⁣

The food in Penang completely blew me away and this is my version of this famous pancake with help from @elliecyl in Penang.  @elliecyl was the most amazing tour guide and treated me to a private tour of nyonya cooking in and around George Town, taking time to places that not everyone gets to see. When we are allowed, if you go to Penang, you must look her up. ⁣⁣

This one pot pasta dish is my latest recipe for @cropdroporganicveg. It’s basically a recipe for #pizzoccheri alla Valentina minus the pizzoccheri, the short buckwheat ribbon pasta from Lombardy in the north of Italy that’s a bit tricky to find in the UK so I’ve used wholewheat fusilli instead. I’ve also used Gruyère in place of the traditional Valtellina Casera which is also tricky to find. ⁣⁣

It used to strike me as quite strange to pair potatoes with pasta but it really works; the silky soft potato somehow complements its starchy cousin. And let’s face it, what’s not to love about pasta and potatoes enveloped in lots of cheese!?⁣⁣

Eat this #comforting dish after a cold winter’s walk if you don’t happen to have any snow capped mountains nearby. It happens also to only take a jiffy to make so you’ll be filling your empty bellies in no time. ⁣⁣

Serves 2⁣⁣
⁣⁣
200g dried wholewheat fusilli pasta⁣⁣
100g peeled potato, cut into 1cm dice⁣⁣
125g savoy, cabbage, tough core removed and cut into 1cm strips ⁣⁣
40g butter ⁣⁣
1 garlic clove, finely grated⁣⁣
60g Gruyère or Emmental, grated⁣⁣
25 g Parmesan, grated⁣⁣
4 sage leaves, finely sliced ⁣⁣
Black pepper⁣⁣
⁣⁣
Bring a large pan of salted water to the boil. Add your dried pasta and cook according to the instructions on the packet. ⁣⁣
⁣⁣
5 minutes before ready, throw in the potato and cabbage. Bring back to the boil and cook for 5 minutes, until the pasta is al dente and the potatoes cooked.⁣⁣
⁣⁣
Drain the pasta and vegetables in a colander, reserving some of the cooking water. Allow the pan used to cook the pasta to dry. Then add the butter. Melt over a medium heat and add ⁣⁣the garlic and sage. Allow to cook for 1-2 minutes, until the garlic has lost its rawness. ⁣⁣
⁣⁣
Throw back in the pasta, #cabbage and potato and gently toss. Sprinkle the cheeses over the top along with a good grind of black pepper. Toss together gently, adding around 50ml of pasta cooking water for moisture. Serve topped with more black pepper. ⁣⁣

Starter was caramelised chicory with Roquefort, candied pecans (a bit of fennel seed in them), blood orange and castelfranco, a beautiful leaf both in flavour and appearance. Everything was dressed with a blood orange and grape molasses vinaigrette type number. ⁣

Mum requested a fish pie for a main which I was pleased with. Some home salted capers I was gifted, a little mustard, nutmeg and cheddar made their marks on a lovely rich béchamel. Peas also went in. ⁣
