Last week, @air_restaurant did it again! Another amazing visit from a Japanese chef, this time, tempura master chef @hitoshi64arai from Tempura Tenko in Tokyo. Sitting at the counter at @hitachinosf, we experienced an extensive tasting menu of appetizers and tempura, with ingredients and seafood both from Japan and locally sourced. Have you ever had uni and shiso maki tempura? Lotus root, and prawn 🍤 from Kyushu and Hokkaido scallop wrapped in seaweed and delicate kisu (whiting) and anago... And corn! He uses three kinds of sesame oil and a very fine wheat flour from Japan. What an experience! Great pairings with Hitachino beer 🍻 and sake! Loved the shrimp tendon at the end too. Now I’m obsessed. Such beauty at last week’s dinner at @tawlasf with our affable host, @eklektikon! His book of handcrafted and natural Greek wines is beyond—the wines were so vibrant, expressive, charming, and quite perfect with the abundant spread. Truly a match made in Mediterranean heaven. I want a mixed case of these wines to get me through the summer, so evocative of a place I love. Efharisto! 🇬🇷
