Happy Earth Day friends! There are so many things I can say, but I’m just going to be honest. Earth Day is everyday. Don’t be an idiot! Be respectful. Take care of the earth. Reuse. Reduce. Recycle. Ditch the plastic. You should do it for our earth and its future, but at least do it for our children’s future. Because their future depends on our actions, and right now our actions suck. 🌎♻️ Lets make our planet a better place!

Our week nights tend to be a bit chaotic and crazy, so easy meals with little prep is the way to go for us. If I’m not making something in the crockpot or a sheet tray dish then it’s a simple protein and loads of veggies 🥒🥦🍆🍅🥑 One of our go-to dishes is baked salmon with salt, pepper and @paleopowder It’s so easy to make and packed with flavor and healthy benefits. Tonight we had roasted veggies and applesauce as our sides 😋
Happy Sunday! I made these Matcha Pistachio Bars the other day and they were a hit. This was an experiment gone right 🙌🏻 I didn’t write anything down so I’m winging the recipe. It should be fairly accurate 😬 Recipe Below 👇🏻 MATCHA PISTACHIO BARS 1/4 cup almond flour 1/4 cup coconut flour 2 TBS coconut oil, melted 1/4 cup pistachios 1 tsp vanilla Pinch of salt 1 tsp matcha powder 1/8 cup honey Optional: 6 ounces 100% dark chocolate 3 TBS honey 2 Tbs coconut oil Blend ingredients together (I used a @vitamix ) and press into a square container lined with parchment. Freeze for one hour. Cut into one Inch squares. Enjoy like this OR if you can tolerate cocoa, melt the cocoa in a double broiler. Add the honey and coconut oil and dip the squares until covered. Sprinkle with Himalayan pink salt and crushed pistachios.
