There was a period this past summer where there was a severe drop in the quality of California Koshihikari rice, which is what the vast majority of higher end sushi restaurants use. The rice had a very dough-y aftertaste and a feeling of uncooked flour. 😣 🍣 And so we switched to using Japanese rice, experimenting with many varietals. The kind we use now has very pure flavor, and the rice glows and shimmers like an ocean reflecting sunlight. This shine isn’t just cosmetic; it’s something guests can absolutely feel and taste. 🌊 🍣 Cali rice is now back to good again though, but I won’t be going back to it despite it being significantly cheaper (though Cali Koshihikari is still high quality and not at all cheap). At this point I might be the only sushi chef in TX that uses Japanese rice. 🍚 🍣 There are many compromising decisions I make daily, not always in the favor of better quality. But the feeling of dominance I have when I cradle glowing grains of sushi rice on my fingertips is a personal enjoyment that I won’t be giving up. 🍣 #feelingofdominance #omakaseaustin #austin360eats #eateratx
Himi Buri: wild mature hamachi, a beautiful fall/early winter fish. I seldom serve hamachi unless it’s wild. Taste is more like tuna than typical farmed hamachi. Aged for a week. 🙂 🍣 And the obvious remark will be how I age fish. Well, it’s quite simple: After it’s cleaned and gutted, I wrap in paper towel, put in trash bag, and let it sleep on ice. I check it everyday, changing out the paper towel with fresh one every day. 👍 🍣 So when do I know it’s ready?
