I know it's hard to tell but this batch of kohada is SO BIG AND FATTY! Our opening was rough. Like many restaurants, we had to get past many unforeseen delays and costs. I opened up by the skin of my teeth, with all credit cards maxed out and not much in the bank. Wallpaper was still hanging off the walls, construction ladder in the lobby, no signage outside. I had to open up the restaurant anyway. Because F it! I don't care how crappy we look right now; I'm the best sushi chef within 500 miles, and I'm opening this sumbitch up with that lone kid that responded to my craigslist ad. The food alone would not be enough to carry me long term. If there is one thing lacking at my restaurant, it's narrative. We don't have a sexy narrative, and if you're looking for a story that goes beyond 'Otto makes exceptional sushi', the only thing you'll find is that 'Otto also like burgers... a lot'. 😁That's why it's exciting for me to do a collaboration dinner with @apisrestaurant! I think brown avocado should be a thing. Like how 'green strawberries' are a thing. I think I should make some crudo with super-aged, seed-in avocado, sort-of fermented in its own skin, only partially forgotten about so it's only partially black and green, an homage to the black and green forests of Mexico that it was plucked from...
