Sushi is often thought of as delicate, feminine, fruity, and citrusy. My sushi is very much NOT this way. ✋️🙅♂️It has a lot of forward character with lots of umami. The flavors are bold, deep, layered, complex, and pronounced. It's more 'aged balsamic vinegar' rather than 'lemon juice'. We don't do snowflake, fruity-tootie sushi here! 😤 #omakaseaustin #edomaestyle

Article on the greatest sushi chef I've ever worked for. My sushi bears no resemblance to his, yet Kyoten Sushiko does not exist if not for my experiences under one of the world's greatest chefs. The only chef I've ever worked for who is beyond the food. Beyond the fancy ingredients, techniques, recipes, even creativity. He is about capturing a Sense of Feeling. Live Sea Cucumber! This guy tastes... as good as it looks. 😣 Not going on the menu in the immediate future, but it's fun to experiment. 🤓
