SPECULAAS SPICED PEAR COOKIE #FAIL | The idea, speculaas and pear cookies. Trial #1. Donut shaped speculaas cookies with a pear chip centre. It looked down right gross and didn’t taste or feel too much better. Trial #2. Donut shaped speculaas cookies with a fresh pear centre coated in hard candy to both preserve and keep in place. The heat from the candy heated up the pear slice, resulting in excess liquid being… excreted?, leaked?, none of those sound right but you get what I’m saying. Which resulted in the hard candy melting. The chickens weren’t too fazed by that though. Trial #3. I tried, I really tried, but I couldn’t logistically see a way to incorporate fresh pear into a cookie AND have the cookie be stable for any length of storage time. Absent simply chopping it up and adding it to the batter that is, which I really didn’t want to do. It’s not visually appealing and is just, well, a little boring. So, I gave up. Not on the flavours, because the flavours are bomb! Just on the idea of them being married into a cookie. I’m thinking maybe a scroll…. Oh, I intended to insert this little tid bit earlier but got a little carried away. For those who don’t know speculaas or speculoos (pronounced by my family as speckled arse) is a type of spiced shortcrust biscuit, traditionally baked for consumption on or just before St Nicholas' day in the Netherlands, Belgium, and around Christmas in Germany and Austria. My grandparents are Dutch, and so we grew up on these cookies, but I’m yet to find a single person who doesn’t fall head over heals for the, so stay tuned for the eventual marriage of speculaas and pear in recipes to come. PEAR AND RASPBERRY CRUMBLE CAKE | The combination of sweet pears and tart raspberries nestled in between a fluffy frangipane cake and crunchy crumble, do I even need to tell you how good it is? My husband has a 'bring a plate' work meeting tomorrow, and two of his colleagues put in requests. Request #1, something with pear. Request #2, frangipane. Which was lucky, because the plan I had already devised after hearing request number 1 was for that of a frangipane cake, pear and raspberry recipe.
