After way too much challah and cookies last night (aka my two weaknesses...see insta stories for deets) I was craving a very light and refreshing breakfast this morning. Went for some plain @greenvalleyorganics lactose-free yogurt with chia seeds, @kitchfix grain-free granola, and some juicy figs. And lots and lots of lemon water. 🍋 __ A little tip when it comes to yogurt... always go for PLAIN, then add your toppings (a little fruit, cinnamon, chia, flax, nuts, healthy granola,) to flavor it how you want. Flavored fruity yogurt is packed with sugar and that's just not how you want to start your day. 😉PS - who can find me in this photo? 🙋🏻 __ Happy weekend!

I made a big batch of this strawberry coconut kale salad yesterday and it's actually even better for lunch today (although it's missing the edible flowers, because that's the difference between real life and Instagram life, am I right? ☺️). The beauty of kale salads is you can make a ton for leftovers and it won't be soggy the next day like most salads. If you haven't tried this recipe yet, I'd definitely recommend it! You can make it for dinner tonight with some salmon, shrimp, or chicken, and then pack up the leftovers to bring to the office for lunch tomorrow. Easy!
