Here's a few from our recipe expert Michaela: ・ - When buying chicken or pork in bulk, separate meal size portions in heavy duty freezer bags and pour your marinade over the meat. When defrosting, your chicken and pork will already be marinating. - When you need thinly sliced or cubed beef, freeze raw meat for 10 minutes before cutting. This will ensure a more uniform cut and make the task much easier. - Freeze leftover chicken, beef and vegetable broth in ice cube trays to have at the ready when you only need a small amount. - To see if your eggs have gone bad, drop them gently in a bowl of very cold water. If the egg floats, toss it. Over time, the liquid inside the shell evaporates, leaving a gas bubble, which is why the egg will float. Fresh eggs will sink to the bottom. - Place cherries (one at a time) on top of an empty soda or beer bottle and use a chopstick to push the pit out of the cherry and into the bottle. - And most importantly, sharpen your knives often. Enjoy! ・ Fresh Cabbage & Grilled Halloumi Tacos ・ Ingredients: - 1 head cabbage; separated into leaves - 2 teaspoons salt - 1 (4.5 oz) container Halloumi* cheese - 1 tablespoon olive oil - 1 (15 oz) can Glory Foods Seasoned Tomatoes, Okra and Corn; drained - 1/2 avocado; diced - 2 tablespoons minced cilantro (optional) - 1 red jalapeño, sliced into thin rings - 1-1/2 cups Mexican shredded cheese blend - 1 fresh lime; quartered ・ Directions: - Bring a large pot of water to a boil along with the salt. Blanch cabbage leaves until soft (about 2 minutes); drain on a paper towel. - Cut Halloumi into 3/4 inch slabs and rub with olive oil. - Grill for 2 minutes per side, remove from grill and dice. - Drain and heat TOC for a couple of minutes in the microwave. - Fill steamed cabbage leaves with Halloumi, TOC, avocado, jalapeño, cilantro and shredded cheese blend; roll up burrito style. - Serve with a lime wedge. ・ Yield: 6 tacos Prep time: 10 minutes Cook/Grill time: 10 minutes ・ * If Halloumi is unavailable in your area, substitute with firm tofu.
We had so many good grilling tips for our recent Win-A-Can Wednesday contest it was hard to choose a winner! We selected one winner at random so congratulations to Kelly Lopez! Her winning grilling tip was: Marinate ribeye for several hours at room temperature. Love Worcestershire on all my meats when grilling. Do not marinate fish longer than 20 minutes as the citrus in the marinade will break down the meat of the fish. - Glazes give foods a beautiful, glossy sheen. A basic glaze consists of melted jam and fresh herbs. Today's #MeatlessMonday recipe just might become your new favorite cauliflower dish! These grilled cauliflower steaks go perfectly with our Seasoned Mustard Greens and they are a hit! ・ Grilled Cauliflower Steaks over Greens ・ Ingredients: 1 large head cauliflower 1-2 tablespoon olive oil 2 (27 oz) cans Glory Foods Seasoned Mustard Greens 2 tablespoons butter 1/2 cup salsa ・ Directions: Heat grill (or stove-top grill pan) to medium-high heat. Steam cauliflower until ALMOST fork tender (about 8-9 minutes depending upon how large). When cool enough to handle, trim off 2 ends and cut into 4 “steaks”. Rub both sides with a small amount of oil to prevent sticking to grill. Grill cauliflower steaks for 1-1/2 minutes per side. Drain mustard greens and heat with butter. To serve, divide greens between 4 heated plates and top with a cauliflower steak. Summertime isn't always the best time for a hot soup but this chilled soup is tasty and refreshing on a hot day! This week's #MeatlessMonday recipe features our Glory Foods Honey Carrots and they help make this tomato soup irresistible! 🍅 ・ Chilled Carrot & Tomato Soup ・ Ingredients: 2 teaspoons vegetable oil 1 shallot; chopped fine 2 garlic cloves; minced 1-1/2 cups vegetable juice (such as V-8) 1 (28 oz) can petite diced tomatoes (do not drain) 1 (14.5 oz) can vegetable broth 1 (15 oz) can Glory Foods Honey Carrots; drained and chopped 3/4 cup (from a 15 oz can) diced potatoes 1/4 cup finely chopped flat-leaf parsley 1 teaspoon fresh lemon juice 1 ripe avocado; diced Salt & pepper ・ Directions: Heat oil in a large soup pot. Add shallot and garlic; sauté on low for 2-3 minutes. Stir in vegetable juice, diced tomatoes, honey carrots and potatoes. Simmer on low for 10 minutes, stirring occasionally. Remove from heat and stir in parsley and lemon juice. Chill for a minimum of 3 hours. If you're looking for a great #GrillingRecipe this weekend then you're in luck! Beef Burgers are good but Bean Burgers taste great and are a healthier option too. Put these on the grill this weekend and your taste buds will be impressed! ・ Bean Burgers ・ Ingredients: 1 (14.5 oz) can Glory Food Seasoned Great Northern Beans; drained well 1-1/4 cups fine bread crumbs 2 whole eggs 1/4 cup fresh parsley; stems removed 1-1/2 tablespoons mayonnaise 2 teaspoons freshly grated lemon zest Olive oil 4 fresh burger buns 4 teaspoons butter 4 crisp lettuce leaves 4 slices beefsteak tomato ・ Directions: Prepare grill to medium heat. In the bowl of a food processor (fitted with metal blade) combine the beans, bread crumbs, eggs, parsley, mayo and lemon zest until the mixture just comes together. Form mixture into 4 patties. Rub both sides with a small amount of olive oil and grill for about 3 minutes per side. Spread butter onto the inside of buns and grill for a minute until lightly browned. To assemble, place a lettuce leaf on the bottom of the buns (this will avoid the bun getting soggy from your chosen condiments) followed by your condiment (mayo, mustard, ketchup, etc). Grab your salad bowl and start mixing! 😋 ・ Lentil Succotash Salad ・ Ingredients: 1 tablespoon virgin olive oil 1 teaspoon fresh lime juice 1/2 teaspoon Dijon mustard 1 clove garlic; minced 1/2 teaspoon dried oregano 1/2 teaspoon sea salt 1/2 teaspoon ground pepper 1 (15 oz) can (cooked) lentils; drained 1 (14-1/2 oz) can Margaret Holmes Succotash; drained 4 cups mixed baby lettuce 1 grated carrot ・ Directions: In a small bowl, whisk together the olive oil, lime juice, mustard, garlic, oregano, salt and pepper. Empty canned lentils in a medium bowl. Pour olive oil mixture over lentils and stir. Add succotash; mix well and chill for 1 hour. Divide lettuce and grated carrot between 2 chilled large salad or pasta bowls and spoon lentil salad over lettuce. Serve with fresh lime wedges, if desired ・ Yield: 2 dinner servings
The weekend is just about here so that means it's time for another grilling recipe! These stuffed peppers feature our Seasoned Black Beans and are sure to be a hit. Enjoy! ・ Southwest Yellow Bell Peppers ・ Ingredients: (Stuffed peppers) 2 large yellow bell peppers; sliced in half lengthwise (seeds removed) 5 red jalapeno peppers 2 tablespoons plus 1 teaspoon olive oil; divided 1/3 lb ground turkey 2 tablespoons chopped white onion 1 clove garlic; minced 1/2 teaspoon poultry seasoning 3/4 cup (from a 15 oz can) Glory Foods Seasoned Black Beans 1/3 cup shredded Monterey Jack cheese Dried cilantro for sprinkling ・ (Sour cream-lime drizzle): 4 teaspoons dairy sour cream 1 teaspoon fresh lime juice 1 teaspoon freshly grated lime zest ・ Directions: Prepare grill to medium heat. Rub the bell peppers and 4 of the jalapeño peppers with a teaspoon of oil. Slice the remaining jalapeño into thin circles; set aside. Heat the remaining oil in a small skillet and fry the ground turkey for a few minutes until no longer pink. Stir in the onion, garlic and poultry seasoning; cook 30 seconds more. Transfer to a mixing bowl and stir in black beans. Divide the mixture between the 4 bell pepper halves and scatter with cheese. Grill (with the lid closed) for 6-7 minutes until peppers start to soften. Grill the remaining jalapeños alongside the stuffed bell peppers, turning them occasionally. Stir together all ingredients for the sour cream-lime drizzle. To serve, place stuffed bell pepper halves onto a small plate along with a whole grilled red jalapeño and fresh lime wedge. Enjoy! ・ Southern Summer Chilled Spaghetti ・ Ingredients: 2 (12 oz) box thick spaghetti Tablespoon plus 2 teaspoons garlic flavored olive oil 2 green onions; sliced into thin circles 1 cup Arugula (or baby spinach); chopped well 1 cup bottled Italian dressing 2 (15 oz) cans Glory Foods Tomatoes, Okra & Corn; drained well and tomatoes chopped well 1 red jalapeño; sliced into thin circles Parmesan cheese for serving Thin breadsticks (optional) ・ Directions: Boil spaghetti according to box directions. Drain and transfer to a large bowl. Stir in garlic olive oil, green onions and arugula; cover with plastic cling film and allow pasta to rest 5 minutes to wilt greens. Stir in dressing, TOC and jalapeño (saving a few circles for garnish). Chill a minimum of 2 hours and toss well before serving. Fire up the grill and have a great weekend! 🔥 ・ Chicken & Pinto Bean Quesadillas ・ Ingredients: 6-8 inch (from a 17.5 oz package) soft flour tortillas 1 (14.5 oz) can Glory Foods Seasoned Pinto Beans w/ Onions; drained 2 (4.5 oz) cans premium canned chicken; drained well 1 small red jalapeño (plus extra for grilling); seeded and minced 1 teaspoon fresh lime juice 2/3 cup shredded Mexican cheese blend 1/2 cup prepared guacamole Fresh cut limes and sour cream for serving, optional ・ Directions: Prepare grill to medium heat. Lay out 3 tortillas on work surface. In a bowl, stir together the pinto beans, chicken, jalapeños and lime juice. Divide evenly among the 3 tortillas and follow with a scattering of cheese.
