Anyone who knows me also knows that Dole Pineapple Whip is probably my favorite dessert. Ever. Since I'm currently on the GAPS Diet to heal my gut, I can no longer eat the usual Dole Whip and came up with my own version. I've tried various copycat recipes and I finally tweaked and tested enough and came up with this. Got to say that it tastes pretty darn near close to the real deal. Here's the recipe: * 2 cups frozen pineapple * 6-8oz of unsweetened full-fat coconut milk (be sure to find some that has no weird additives or preservatives) * juice of half a lemon * juice of half a lime * pinch of salt * No added sweeteners! Just blend and enjoy! 🍍
