The humble yuk beng (minced pork pancake) is to Cantonese food what meatloaf is to American -homey, comforting and all around yum. This version, served in a tiny family restaurant, is spruced up with fresh water chestnuts to add crunch to the pork, and a salty egg york for savory interest--and, I suspect, to add some color to the #brownfood. Nice twist on the classic dish!
