Rare Medium Magazine @_raremedium also put the spotlight on the dishes coming out of Sydney Cricket Ground's kitchen. Featured on the butcher's block, a whole Beef Butt rubbed with saltbush and native thyme, cooked low and slow for 18 hours then served in a ciabatta baguette with celeriac slaw. Next up was a MS6+ Tajima Wagyu Tenderloin that is gently sous vide then finished on a hot buttery grill and seasoned with hickory salt. It was paired with oxtail that has been braised overnight and crispy bone marrow pieces coated in beef fat and panko crumbs. Cricket is an essential part of the Sydney summer, and a busy time for catering. We loved the feature about Sydney Cricket Ground (with catering managed by Delaware North) in the Summer 2018 issue of @_raremedium Magazine. They will be managing approximately 4,000 customers a day during the test series, ranging from general admission and members retail offerings through to high end a la carte, cocktail chef stations, suites buffets and grazing and plated function rooms to name a few.
