A quick weeknight dish full of the flavors of spring. Sauté pancetta with thinly sliced leeks in olive oil until soft. Add a glass of vermouth or white wine. Reduce. Add two very ripe diced fresh tomatoes and cook until soft. Toss through farfalle and add 2/3 cup of Parmesan. To be honest I don’t really understand the obsession with cookies at Christmas. Is it because as baking goes it’s relatively non-threatening? Is it because they appeal to the child in us with their seasonal shapes? In terms of labor they are quite time consuming. I much prefer the methodical stirring and pouring of cake batter and I definitely have more of an appetite for @nigellalawson ‘s clementine cake than a shortbread piece shaped like a Christmas tree. If you really want to make waves this Christmas with very little effort and virtually no baking skills, try these mincemeat tartlets. Unfurl a sheet of thawed puff-pastry (store bought here is more than acceptable) onto a floured surface. Brush the whole sheet with beaten egg, then with a pizza cutter, slice it into squares of about 2 or 3 inches. Spoon a scant teaspoon of mincemeat onto each square, transfer the squares to a greased cookie sheet and bake at 375f. The sides should be puffy and golden. Remove, leave to cool and serve. In Britain, modern mincemeat contains no meat but lots of delicious dried fruit - @wholefoods and @earthfare and other grocery stores stock around this time. It is fun to offer them to unsuspecting Americans and see the look of mild horror when you tell them it’s a dessert made from mincemeat.
