It’s been an honor and a pleasure to brew with @moderntimesbeer this week. We knocked out a hoppy concoction at @moderntimesdtla on Tuesday and @yeastofeden is down in San Diego with @galactical and crew brewing some mixed fermentation goodness. Big announcements today friends. First, we've followed suit to some of our Bay Area budz and have released Champagne Hopi - our first iteration of a Brut IPA! Employing an enzyme to assist a neutral ale strain in fermenting all available sugar in the wort, this IPA is bone dry, yet incredibly drinkable and hopped with Mosaic, Citra & Azacca. It's not fined so there's a bit of hop haze, and carbonation is quite high for an effervescent, refreshing character. . . Second, we're releasing a never-before-brewed style (by us) at our Monterey brewpub today: Altbier! This is a classic, Northern German-style malt forward amber ale, native to the Dusseldorf area. We've used traditional German hops and employed a yeast that is historically accurate to brewing these types of beers. It's crisp, malty (biscuity, light caramel) and has a moderate hop bitterness. We've captured all the CO2 naturally (via the German brewing practice of spunding) for a gorgeous head of foam and a creamy texture. . . Finally, GET YOUR CANS! Ladies & Gentlemen....we just paid the Palapa contractor. The Palapa piper, so to speak. The dream is a reality. We will no longer be exposed...to the elements! This foggy juice has been built up with two expressive yeast strains for extra tropical vibes, and then reinforced with heavy additions of Blanc, Azacca, Idaho 7, Loral, and touch of Mosaic cryo. 🖥⌨️🖱🍻🌴
Release your inner barbarian with this fresh batch of 7.2% hoppy goodness. Bright, peach heavy tones from an East Coast yeast strain fermentation and a dry hop that includes a bunch of our favorites. The result is a hop aroma and flavor chock full of ripe, juicy grapefruit and apricot jam. On the back end, we've loaded up with beer with lots of oats, so it has a soft, creamy texture to support mild hop bitterness. 🛡⚔️🗡

Introducing Alvarado Ultra: Fewer calories, and half the carbs of a regular beer, this refreshing take on “hard water” is brewed with a small amount of malted barley and fermentable sugar. Also dropping today is a fresh batch of one of our faves, Minesweeper. This is a raw, unfined West Coast style IPA fermented with neutral ale yeast and 100% British Maris Otter malt. A harmonious blend of Simcoe and Citra bring bright, fruity flavors that are unmasked by yeast esters, allowing for an unadulterated hop experience. West Coast IPA's don't always have to be bright! $18 / per 4-pack, limit 1 case per person. And bonus for today: fresh new batch of Pils!!! 🍻🤙
A few weeks ago we welcomed the crew from @burgeonbeer in San Diego brew some hoppy juice. These guys are making some amazing beer down south and it was great to put our minds together. Backed by a blend of British Maris Otter and American 2-row barley, with additions of malted oats for a pillowy softness on the palate, this double IPA was fermented with an expressive yeast that augments tropical hop flavors of Mosaic, Citra & Enigma hops. We highly recommend you grab some tomorrow along with Minesweeper! $20 / 4-pack, one case limit. 🍻
Excited for another week of HOPS y'all. Starting with our collaboration Double IPA with @burgeonbeer, Root Bound has been fermented with an expressive yeast strain and pummeled with Mosaic, Citra & Enigma hops. And then we have bae, Minesweeper. This is an unfiltered, unfined West Coast IPA fermented with a neutral ale strain and brewed with 100% British Maris Otter malt. This choice of malt contributes a biscuity, chewy base for the beer and in our opinion amplifies the hop character, which a marriage of the best Simcoe & Citra we can get our hands on. 👍👍
