  • Mr. Chew, a semi homeless man who spends his days at the back alley of our restaurant, has been around for years. He’s kind of a guardian for us, chasing away unscrupulous folks trying to steal our oil or shooing off those who would dump their garbage in our bins. He’s helped out a lot by the community and he doesn’t have to collect so much cardboard anymore. But he is still very attached to the trolley that served him well through all the years.

Over the last few weeks he’s converted the trolley to a kind of moveable garden with proper flower beds and a herb garden. The back panel of the trolley is a magical tapestry of plastic twine that morphs continuously between scenes conceived by an unrestrained imagination. We have so much respect for Mr. Chew. Even with nothing he makes the effort to help those more fortunate than him.  Living in a situation where almost all of us would find despair, he finds dignity and purpose.

It’s not so much that I learn about obedience to my bosses or to the restaurant but more obedience to my own values.

Above are just some of the people I work with. Every single one of them in some form or another has reminded me of these same values we celebrate today. It has taken a lot for us to stay together as a team and this is the 2nd Hari Raya Haji that we have celebrated together and we wouldn’t have made it this far without each other and the values that we share.

Yesterday was my last day at @thecoconutclubsg, but the memories created in the past 1.5 years will always be etched in my mind. It was the place where I had my brightest smiles and my saddest tears. The people there were from diverse backgrounds, and yet we became a family, an imperfectly perfect one I would say. It was my home away from home.

I was given the chances that most people wouldn't get as I got to work with my best friend @wecrossedpaths and my love @tanuzen. I even had the opportunity to serve @leehsienloong and other SG ministers as well as President Duterte and other delegates from overseas. .
I'm also lucky to have had bosses who cared about my feelings and acknowledged the efforts I put in at work. They didn't treat me as an employee, they saw me as their friend. I also had a great A Team, my managers @nicholasmathias @aytwozee Syah and fellow supervisors @lutfi.hzq @oganjashan who I could always count on. 
The Coconut Club is a place where my friends and family could gather for a simple meal and more importantly for a good time. They always enjoyed themselves even if it was just over a simple plate of nasi lemak.

I guess the most important thing is that I acquired skills that I wouldn't have learnt if I was bounded to a desk. In truth, I came to The Coconut Club as just a mere waitress who had no clue about F&B operations. But I grew into someone who my bosses and managers could entrust the whole restaurant to and allowed me to run the show. There were times I had to make impromtu decisions on my own and I'm thankful for the FOH and Kitchen staff for not doubting me and trusting that what I decided is best for everyone.

Another takeaway would be the friends I made over the year. Some I'll see 3-4 times a week and now I'm not gonna see them at all in a week 😭 But this isn't good bye, just a see you later because I know I will be back somehow someday.

We spend a lot of time cleaning our kitchen at The Coconut Club, about 300 man/woman hours a month. It’s cleaned twice a day, once after each service and we have a 3 hour deep clean every Sunday. The Sunday clean looks like any other day’s clean at first. The big oil pans and stove tops come out. They’re scrubbed and soaped till they’re spotless. One cook will be finishing off the remaining dishware and glassware from service. Another cook will be cleaning the fryer baskets while the fourth cook starts putting away all the food to be kept for the next day.

Everything starts to look messier for a while. But after all the small things are cleaned and put away, our cooking equipment gets pulled away from the wall and we start going behind them to clean the back of the equipment as well as the tiled walls. Someone will start pulling apart the exhaust to start cleaning the grills. Another will start removing all the plates on the pass so he/she can start cleaning the glass shelf.

At this point the kitchen is literally cleaned from the top to bottom. Fridges are emptied, soaped and sanitized. The pipes under the sinks are dismantled so we can attack the germs at every nook and cranny. We throw buckets of water on the floor to push all the remnants of food into the drain then the floor is soaped and scrubbed. One of the last things to be washed is the dishwasher and then the drain. We get on our knees and start scrubbing the longkang from the far end all the way to the drain hole. Finally the floor is wiped dry. A cigarette is lit, a beer is poured and the week is finally over. The exhaustion sets in and we think about the 14 hours we have left before the next service. Cause come Monday morning at 11am we will hear the familiar sound of Syah’s voice, “4 Nasi Lemaks, 1 Long Bean, 1 Sambal Sotong, Fast Fast!”

Shallots, garlic, turmeric, galangal, ginger, chilli, kencur, candlenut, lemongrass, coriander seed, lada puteh, daun salam, kemangi, kaffir lime, santan & 1 whole chicken.

Non-stop pound coriander seed and white pepper. Make a rempah by blending together everything except the 3 leaves and lemongrass. Fry the rempah in an ungodly amount of oil, kampung style, together with the daun salam, lime leaf and lemongrass until fragrant (honestly I've always felt the description fry until fragrant totally useless. What kind of fragrance???!!!! Is it the fresh fragrance or the deep earthy fragrance? Why can't just give timing?)

Add chicken parts and stir for a few mins then remove and chargrill chicken till kena the black black. Then add back in wok with sauce, add santan, a little water and finish cooking till chicken is tender then toss in kemangi for final touch. Oh shit salt! Ok throw away start all over again and add salt a little at a time throughout the cooking process. Remove chicken from wok and plate. Finally spend an hour taking photos for Instagram.

Oh p.s. you need to cook on low heat for the final cooking orwise your santan will separate and you will have a different dish, Ayam Garbage - pronounced 'garbarge' like enlarge.

Fry the rempah in an ungodly amount of oil, kampung style, together with the daun salam, lime leaf and lemongrass until fragrant (honestly I've always felt the description fry until fragrant totally useless. What kind of fragrance???!!!! Is it the fresh fragrance or the deep earthy fragrance? Why can't just give timing?) . Add chicken parts and stir for a few mins then remove and chargrill chicken till kena the black black. Then add back in wok with sauce, add santan, a little water and finish cooking till chicken is tender then toss in kemangi for final touch. Oh shit salt! Ok throw away start all over again and add salt a little at a time throughout the cooking process. Remove chicken from wok and plate. Finally spend an hour taking photos for Instagram. .   • Happy International Women's Day! 
Last year we gave out free cendol & kuih to each of our female customers in celebration of IWD. It may have been just a small token of appreciation but what's more important is the work that we do behind the scenes throughout the year. We put in a lot of effort to make sure we have a safe working environment that is free of harassment of any kind. We found it difficult because a lot of misogynist behaviours have become normalised in our society. It took effort to look into ourselves to see the changes we needed to make but we did it together. We spent a lot of time discussing with our male and female staff about what kind of environment they wanted to work in. What kinds of behaviours were ok and what kind of language was ok to be used. We now give all new staff a code of conduct pamphlet that details information on what constitutes harassment, who they should speak to if they experience any kind of harassment and contact information of a third party hotline should they feel uncomfortable talking to any of our staff.

I won't lie, we've had issues with harassment over the year but we shut it down fast because our female staff know where we stand on these matters and feel comfortable to bring it up to management.
Even though a kitchen is usually a machismo filled environment, almost 50% of our cooks are women. In the FOH its probably 70%. So women are fully involved in driving our food and service. .
We still have a long way to go though. Women are still underrepresented at the management level in our restaurant. It's an important issue to us and we need to ensure that women have not just pay parity but occupational parity as well.

The UN's theme this year is Press For Progress. And that's exactly what we're gonna do. We may be just a Nasi Lemak restaurant but we got big ideas and changing the world around us for the better is a big goal for us. So Happy International Women's Day to all ours sisters, mothers and daughters. Keep pushing on and don't give up the fight!

We pounded turmeric, garlic and toasted coriander seeds into a paste we used to marinate the quail. Then we slow fried the bird till it's 'cripsy' and tossed it with our own home made Sambal Hijau - only available to employees cause we have to tumbuk the shit out of it.

  • It's been an interesting week since we stopped using plastic straws at The Coconut Club. We've been accused of being ridiculous, lazy and thoughtless. One customer said that it was outright bad service and it was cost cutting under the guise of environmentalism. Another said that he needed a straw because he was OCD, but then went on to drink directly from his water glass.
.
But it's heartening to know that 99% of our customers understand and support us in reducing unnecessary waste. Usually it takes a prompt or two about how no one uses straws at home or that we are happy to provide a straw if they really insist (we're keeping our existing straws around for older folks or young children who require them and are looking for a good paper straw alternative right now).
.
But what seems to work the best is when our manager Syah asks our customers if they love turtles. He then stares at them with his forlorn turtle face and they always relent.
.
The best consequence of this whole exercise is that our staff have slowly started to question other parts of our operation and each day we make these small decisions that reduce our waste just a tiny bit. We still use plastic all over the place, like our takeaway bags and our da bao boxes. It'll take time to find suitable alternatives while calculating how much of the cost we can absorb.
.
Who knows how far we can take this, in restaurants disposability and hygiene are intertwined. But with your continued support we're gonna stick on this path for a while.

Trained on the foothills of the Himalayas under the great Yogi ChanraiDoctorlee, Vitiraa has the magical ability to turn hot water into not just kopi and teh, but also milo. As one of our few Malaysians working with us she definitely represents! Asked to plaster up the entire wall with repair mortar, covering up the 100 year old bricks, we hoped that they would allow us to leave 2 small openings as windows into the past. Like us, many of you have become quite fond of our wall and we apologise for the loss of it. For us it's a reminder of how much we have to respect the spaces we work and live in. 100 years ago this shophouse use to house poor immigrants who came to Singapore looking for work. There was always someone sleeping on one of the 200 over beds in the shophouse. People who worked at night rented the beds for the day and vice versa. Many of these immigrants went on to become our grandparents. We often wonder whether some of the grandchildren of those immigrants come here to eat. Today these walls still sustain the lives of the scores of people who work within them, allowing opportunity to be passed on to a new generation. We began work to plaster up the wall this week after structural engineers deemed our design safe. We'd love to hear from you about what we should do with the wall once it's plastered. The Coconut Club is as much your restaurant as it is ours.
    The Compromise. The Building & Construction Authority had informed us that our wall was structurally unsafe due to the expanse of the exposed bricks.   • It's a sad day cause the King of Ann Siang Hill has left us. Kah King (centre back) was one of our first hires and he left us yesterday to go back to Ipoh to look after his mother. We wish him all the best and hopefully after he's taken care of his family we can look forward to the Return of The King!

  • We want to tell you the story of Aunty Diana. She's our chef's Grand Aunt and she came to The Coconut Club to celebrate her 90th birthday! Aunty Diana was a stewardess for Malayan Airways right through till it became Singapore Airlines where she became the airline's first Singapore Girl! Now in her 90's she still spends much of her life helping out the oldies at old folks homes. When our chef asked her to tell the story of how she use to climb out onto her roof to fix her TV antennas she said, no la, that was in my younger days when I was in my 70's. Aunty Diana is not just a pioneer but also someone who continues to show us what this country should be all about - resilience, kindness and service to those less fortunate than ourselves. FYI she spent the whole of last night sewing this dress you see out of old SIA material she had! Check out the logos! So freakin' cool I can't even handle it.

  • Super excited our carpenter Mr Toh was featured in the Straits Times today! With his son Kenneth taking over making it a 3 generation carpentry business. Mr Toh did all the woodwork at The Coconut Club. 
Still strong at 81 he personally finished all our tables and chairs and even carried them to our restaurant. My mother has known him since his 30's and we've been loyal customers of his during all that time. He produces some of the best work in the country. His wife Mrs Toh is a genius at finishing the pieces. Please don't use The Coconut Club as an example of his excellence as the work we requested was super simple. Seeing him work has inspired us to humbly follow the path of the craftsman and hopefully our Nasi Lemak will reach master level when we are that old.
