🔥VEGAN ACKEE & DUMPLING RECIPE🔥 Ackee is Jamaica’s national fruit, traditionally it is served with salted cod as a part of Jamaica’s national dish, ackee and salt fish. I grew up eating this with fish, but to my surprise it is still very good without it, so this dish took little effort to veganize. This can be eaten at all times of the day, but it always feels the best to me when eaten for brunch. Ackee is savory in flavor and has a delicate texture, sort of like how avocado is a savory fruit, but ackee has its own unique flavor. It is very difficult to describe the taste of ackee, because I do not think that there is anything else out there quite like it. I have prepared this simple dish for a lot of Americans now and it has been nothing but rave reviews. As comforting as it is satisfying, you’ll be sure to remember this one for a long time. . I’m featured in the December issue of @thrivemags that hits stores in a few days! It is a truly beautiful spread, the designers at Thrive are so good at what they do and I’m honored to be a part of it for the second time. I know a lot of you out there are wondering where I’ve been and what I’ve been up too, it’s crazy that six months have passed and I have only posted two times! So, I recently started an MBA program at the University of Delaware and I have been really enjoying that. Also, I have been continuing to give one-on-one cooking lessons and I’ve been doing a little professional photography work with a couple restaurants. Aside from that stuff, I’ve been enjoying a period of personal growth and reflection away from social media and I started practicing bikram hot yoga. Bikram is so crazy! Everyone that took my vegan cinnabun class this past weekend unanimously agreed that my buns are better than even the best bakeries in the area, amazing feedback! . A few people have noticed that I haven’t been posting as much lately. To be completely honest I’ve been noticing that social media has been having a negative impact on my mental health. After stepping away for a little, I definitely feel noticeably better. My content has been almost entirely about physical health, but mental health and happiness is just as important, and often times fleeting for many. I don’t think there’s a psychologist on the planet that would tell you that excessive time spent on social media is good for you, and lately I’ve realized that I really need to keep my time on here in check. . Despite the pitfalls, social media has been a great platform for spreading information about the life changing benefits of a plant-based diet. My page has been an awesome source of positivity and it feels truly amazing to make an impact on people’s lives. Be that as it may, I need a break and will be taking some time to re-group. It will also be a great chance for me to focus on writing a book, so look out for that! It could be weeks or months, and I may pop on randomly from time to time, but I will be back at some point in the future with a new plan of attack. . Despite limiting my social media use, I don’t plan on slowing down with my cooking classes. I absolutely love teaching and the classes have been amazing. I know how tempting it is to stay behind the screen, but I encourage you to come out to one of my events. It feels so good to interact with everyone, meet new friends, and learn something new while enjoying bomb food! I also do private classes for anyone interested. . ✌🏾💚 - B
