With the distillery’s whiskies and cocktails becoming more and more available around the world, it seems the brand is getting better and better known amongst whisky lovers the world over. Which is a good thing in my view. As a fan since 2013, it’s awesome to see the brand grow and the strategy of producing high volume, reasonably priced, good whisky paying off (and winning awards, for those who follow such things 😁). @hendyo snapped this photo at the distillery, at the launch of the “Two Fold” (a versatile Aussie whisky if ever we saw one), and there have been a few more releases since - all enjoyable and good fun. The second photo is founder @iamdavidvitale serving up some Starward cask samples at the original distillery. Yep, the first distillery “bar”! You know those nights out which just make you glad to be a whisky lover? This bottle kicked off one of those. I was in Milan, and wasn’t going to leave without visiting the legendary whisky venue @mulligans_irish_pub_milano. So I’m sitting there at this very Irish-looking pub, staring up at a cask end stencilled with “Ichiro’s Malt” (and therefore knowing I’m in the right place), and decided to kick things off with this Rare Malts Dallas Dhu. I take a sip and the bloke sitting next to me leans over and says something like “You must know your whisky.” Turns out he was Fabio Ermoli, co-founder of @valinchandmallet and we spent the next hour or more discussing all things whisky, trying some Valinch and Mallet releases (including a beautiful 19yo Caroni) and learning more about the history of this wonderful pub. I tried the pub's own 15yo Bowmore (which I was happy to find a bottle of at auction last year), a lovely old vintage 8yo GlenDronach, and a few other fun bottles, before I was asked if I wanted to see the collection downstairs. and well, the pictures speak for themselves. An amazing collection of old (and in many cases, legendary) bottles, including the second biggest Samaroli collection I've ever seen. It wasn't a surprise then when I learned that Silvano Samaroli himself was a regular visitor, until his unfortunate passing a few years back. Just a fantastic night where you expect to just have a few quiet solo drams, and end up learning a heap, trying some unexpected things, and meeting fellow whisky lovers. A must visit if you're ever in Milan!
Reason #475 I love whisky shows: You get to try gems like these - a 1980s Macallan 10yo Cask Strength, and a 1967 @theBalvenie single cask, a 32yo. Not cheap bottles these days, but quite reasonable when available by the dram @whiskynow last year...can’t remember the exact price per dram sorry. The Balvenie (1967 ☮️ to 2000) was super elegant. Slightly herbal, slightly citrusy, milk chocolate and lots of berries. Not the sort of bottle you really see available anywhere these days (apart from the odd auction) so it was very much a treat to be able to try it. The 10yo Cask Strength Macallan was just classic old school @the_Macallan - magic, delicious, complex and clean sherry in a 57% wrapper. Another day, another Chichibu post 😂. What’s your favourite type of Chichibu? For me, it’s ex-Bourbon or Chibidaru (quarter cask) single casks. I love the variety of barley strains and cask types the distillery plays with though - from Bourbon to Sherry to fortified casks, beer casks, and wine casks...something for everyone. Like this ex-Pinot Noir cask Chichibu, bottled for Singapore DFS (RIP ⚰️), which I spotted @dramgoodstuff. I haven’t tried it yet sadly, but it’s got an intriguing natural colour! Personally though, whilst I love the variety, I always find myself coming back to ex-Bourbon Chichibu. Simple tastes? Perhaps, but the spirit works very well from a Bourbon cask in my opinion, and it seems plenty of others agree!
Throwback to 2 years ago when I was part of a lucky few HKers to visit the Orkney and @highlandparkofficial, following an already-epic few days at the @the_macallan new distillery launch. Talk about contrasting distillery experiences! From the big, bold, modern (futuristic?) Macallan distillery, to the traditional, brick-construction, pagoda-roofed Highland Park....yet both producing fantastic spirit. When you look up the term hospitality in the dictionary, you may well find a picture of the Highland Park team. Not only were we treated to an in-depth tour of the distillery, followed by a tasting including two Highland Parks from 1968 (one 40yo, one 46yo), we were also treated to a day-long tour of Orkney, including all the historic sites (Ring of Brodgar, Yesnaby Cliffs are must visits), cutting peat at Hobbister Moor, lunch at Lynnfield Hotel (*epic* selection of drams there) and more. To cap it off, we caught up with @hpmarkvardsen for dinner (who'd literally just landed in Orkney and came straight from the airport)! Orkney is a stunning place, and its residents are lovely, hospitable people. I'd actually really recommend doing this type of modern/traditional contrast if you're looking for a few distilleries to visit. An appreciation for the old, and the new, if you will. Also…don’t let the distance put you off. I always though “Orkney…I’d love to visit but it seems like a bit of a hassle”, but the flight was quick, easy, and we went from Speyside in the morning, to our Orkney hotel by the early afternoon. Piece of cake and well worthwhile. Chichibu fans! What's your favourite Chichibu Single cask? With more and more Chichibu Malt Dream Casks (original distillery supporter casks) coming to maturity, we're seeing a lot more Chichibu single casks hit the market, and thanks to awesome bars like @alohawhisky & @ribbon2006 in Tokyo, and @clubqing in Hong Kong, whisky fans often get the chance to try several of them for a very fair price (even ones we can't photograph or name 😉). Especially fair when you consider the astronomical prices some of these bottlings sell for on the secondary market. Chichibu is almost always bottled in the same distinctive bottle shape, but the labels differ wildly, from plain-as-can-be text, to elaborate cartoons (Intergalactic Series, anyone?) and everything in between. I love this one though - bottled for Chichibu's Te Airigh Bar (@te.airigh.takeshi.y), the label features a drawing by the owner's daughter. How cool is that!? It also has the honour of being the first-released 10yo Chichibu! Chichibu uses a variety of cask types and sizes (not to mention various barley strains) and so the final spirit can differ wildly from cask to cask. Personally, I'm a fan of Chichibu from a Bourbon barrel (like this one), and have had some stunning Chibidaru bottlings (quarter casks). I also really enjoyed the ex-Fino cask for Modern Malt Market a few years ago, but it wasn't to everyone's taste. What's hands-down the best Chichibu bottling you've ever tried? Side note: On a trip to the distillery in 2018, we were lucky enough to try some new make distilled from Chichibu's own local barley (i.e. not Scottish or other imported Barley, but grown in Chichibu) and it was *phenomenally* good for a new make. Tag the people you’d chose to share a dram of 55yo Macallan. 2 years ago almost to the day, I was lucky enough to be standing (and freezing my butt off) at the footsteps of the new @the_macallan distillery, as part of a small cohort of media and others, at about 11:55pm on the very first night the distillery officially opened. There was a media embargo on until midnight (so much so that when we arrived earlier in the afternoon, there were large barriers shielding any glimpses we may have been able to steal in the daylight during the drive in!) so there was big build up to the point we finally got to see it in person. It didn't disappoint. After what can only be described as an epic light and music show which brought the entire complex to life, we were welcomed with a dram of 55yo Macallan, an assortment of other rare Macallans (M, No.6, 25yo Sherry Oak) to enjoy at our leisure, and a midnight tour of the new facility. In Tuxedos and ball gowns. After a multi-course dinner in the grounds of the distillery, cooked and presented by the Roca Brothers of @cellercanroca - at the time the 2nd best restaurant in the world. Absolutely surreal. A once in a lifetime opportunity, and a trip that provided memories and friendships I'll forever cherish. I post a lot of bottle photos on Instagram, but not enough of the awesome people and personalities who make the industry what it is. Time to fix that I think... ⠀⠀⠀⠀⠀⠀⠀⠀⠀ One of those awesome people is Dave Withers (left), Master Distiller for @archierosesyd and all-round nice bloke. Dave used to be the whisky and spirits expert @oakbarrel Sydney, before moving over to the (at the time) relatively new Archie Rose Distillery as Production Manager. Fast forward a few years and he's now the Master Distiller, winning a stack of awards personally and for Archie Rose's products, putting out some truly amazing (and genuinely innovative) spirits, and just generally turning Archie Rose into the awesome distillery I knew it was destined to be (supported by a great team). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In his glass is a sample of my little baby Archie Rose Cask (at the time in mid 2019, only ~5 months old and absolutely FULL of flavour). I was hoping to get back to the distillery over Easter and taste my cask, but alas...COVID-19 put an end to any hopes of a Sydney trip. Unfortunately this is a bottle not many people can get their hands on at the moment. Not necessarily because it’s super limited (it is limited however), but because it’s a travel retail exclusive...and who’s travelling at the moment!? Thankfully the fine folk @themacallan_hongkong were kind enough to send me a bottle recently, so I could try it and write some thoughts on the blog. Taking its inspiration from music (something which Whisky Maker @steven.bremner is very much into), the whisky is all about layering the influence of different casks, not dissimilar to how creating a music track is about layering different elements, instrumentals etc. In this case, the layering is achieved with the use of sherry-seasoned American oak casks, Miguel Martin European Oak sherry casks, and ex-Bourbon casks. So on the surface, a NAS Fine Oak / Triple Cask? Actually on the contrary I found it closer to a Macallan 12 Sherry Oak, albeit with an overall sweeter profile - a fine dram and in my opinion a big step up from Concept No1.
