Umami Chickpea Burger 😍 this is one of my most popular recipes. here’s how to make it: ✨ INGREDIENTS ✨ Burger Patty: 1 tsp. olive oil 1 1/4 cups yellow onion diced 8 oz. crimini or white button mushrooms sliced 2 cloves garlic chopped ½ cup almond flour ¼ cup teff flour 1 tsp. pink salt 1 tsp. black pepper 1 1/2 cups chickpeas ~1 can ✨ Burger: 1 head butter lettuce 1 tomato sliced thin red onions 1-2 slices of medium or large red onion ✨ INSTRUCTIONS In a skillet over medium heat, add about 1 tsp. olive oil or coconut oil. Saute the onion and mushrooms for about 7 minutes, stirring occasionally. If the mushrooms and onions start sticking to the pan, add about a teaspoon of water. Then add the garlic, and cook an additional minute or two. ✨ Meanwhile, in a large mixing bowl, add the almond meal, teff, salt, and pepper. Mix. ✨ Next, in a food processor or high-speed blender (on speed 1) briefly pulse or blend the chickpeas until they are broken down or chopped, but still retain some texture. Remove half of them and put them into the center of the mixing bowl. When the mushroom mixture is done, add that to the food processor or blender (half of the chickpeas should still be in there), and blend for 20-30 seconds until a paste-like consistency is formed. Spoon that into the mixing bowl. Mix everything well, until evenly combined. Split into about 6 portions, roll each into a ball, and then flatten into a patty. ✨ Back in a clean skillet, heat it over medium heat, add about 1 tsp. of coconut or olive oil and then add the patties, cooking about 3 minutes each side. (You will have to do in batches). ✨ Remove to a plate, and build your perfect burger, or serve over vegetables or a salad. Spicy Blueberry Arugula Salad with Hemp-Crusted Avocado. 😍 25g plant protein & 40% of recommended daily Iron intake 💪🏼 ✨ This is one of my fave salads of the moment (blueberries are in season in US until end of Sept!) Here’s how to make it: ✨ Salad 3-4 cups baby arugula organic ½ cup basil leaves sliced 1/2 cup organic blueberries 2 Tbsp. shallot or red onion diced 1 tsp. jalapeños diced (optional) 1 Tbsp. pumpkin seeds 1 Tbsp. sunflower seeds 1 cup white beans ½ avocado, pit removed 3 Tbsp. hemp seeds ✨ Lemon Fennel Dressing 2 tsp. olive oil or to taste 2 tsp. lemon juice fresh squeezed ½ tsp. fennel seeds 1/8-1/4 tsp. pink salt ✨ Place all salad ingredients except for the avocado and hemp seed in a bowl. ✨ Pour the olive oil, lemon juice, and fennel seeds, and salt over the salad, and toss well so that all of salad is coated in the dressing. Add more salt to taste, if needed. ✨ Carefully peel away the skin of the avocado, then on a plate, pour the hemp seeds out and roll the avocado in it, until it is covered completely with hemp seeds on both sides so that you can’t see any green.
