Our first crop of Belgian Endive is ready to harvest. This unique vegetable is a variety of chicory. We grow the roots in the field for 110 days, store them over the winter, then force them in a dark, warm place for 4 weeks. The leaves are crisp, slightly bitter, and oh so delicious.
