These fantastically simple paleo strawberry muffins are packed with sweet and juicy strawberries—and they’re gluten-free and grain-free, too! These strawberry muffins are supercharged with strawberry flavor because the batter is infused with both freeze-dried strawberries and diced fresh strawberries! I was hoping that the freeze-dried strawberries would result in a bright pink-colored crumb once baked, but no dice. But it’s not a big deal because I prefer flavor over flash any day—and these muffins are crazy delicious. I've also got an ingenious tip on how to get the diced strawberries from falling to the bottom of the muffins! Unfortunately, I have no idea if you can use an egg substitute or use another flour in place of almond or cassava flour recommended in this recipe. You can definitely substitute other fresh, seasonal fruit (e.g., blueberries, raspberries, diced peaches, etc.) in place of the strawberries and the muffins will taste amazing. If you must, you can also leave out the freeze dried strawberries, but the muffins won’t have as much concentrated strawberry flavor. Combining tender-crisp asparagus stalks with a lemony vinaigrette and topped with fluffy, sieved hard boiled eggs—it’s the perfect vegetable dish to serve with Sunday brunch or a colorful spring supper. This old school asparagus salad recipe is traditionally topped with hard boiled eggs that are pushed through a fine mesh sieve so the bright yellow yolks resemble the small yellow flowers of the mimosa tree, a.k.a. Time for my protein shake! Just kidding! I blitzed 36 eggs in my Vitamix to make scrambled eggs for @musuboykitchen’s weekly egg musubi and egg + Spam musubi orders. The eggs get a little frothy at the top, but this method is definitely the most efficient way to blend them up!

If you need a dose of comfort, I just updated one of my favorite recipes on the blog, World’s Best Braised Green Cabbage and added it to the Nom Nom Paleo iOS app! One of the most dog-eared cookbooks on my shelf is @mstevenscooks’s All About Braising, and my favorite recipe in it is for the “World’s Best Braised Green Cabbage.” It transforms a humble cabbage into a tender, savory, vegetable showstopper! I posted this recipe on the blog way back in the dark ages, a.k.a. 2010. The old pictures were terrible so I decided to zhuzh up the dated post with new step-by-step photos and add new cooking tips and tricks. Braising cabbage—cooking it in some fat and a bit of liquid in a closed cooking vessel until it’s meltingly tender—is a magical example of how patience pays off. My adapted Whole30-friendly version of this braised cabbage recipe is a mainstay in my arsenal of vegetable sides for good reason: it transforms a lowly vegetable into a dish worth oohing and aahing over. Stress baking again. (This is a paleo sandwich bread that will be in cookbook #3. Please don’t ask me for the recipe. ✌️) I just found out that a friend’s son was attacked last week in NYC. Her son is just a couple of years older than Owen and this news really hit me in the gut. These senseless attacks on Asian Americans are real and scary. Her family is participating in a fundraiser to help protect our Asian elders and stop the violence. Wenter Shyu and Sam Butarbutar, Queer and Asian-American owners of @thirdculturebakery in Berkeley and Aurora, Colorado, are raising funds to purchase safety kits that will be distributed free of charge to local community centers in CA and CO to those most vulnerable. Each safety kit includes one keychain alarm and a keychain pepper spray. Directions for how to use these items will be translated into Chinese, Korean, Vietnamese, Lao, Thai, Japanese, Cambodian, Spanish and more.
