Citrus Marinated London Broil with Cilantro Gremolata. The bold flavors in this marinade are beautifully complemented by a bright and fresh gremolata. ➖➰➖➰➖➰➖➰➖➰➖ Ingredients: 🔸London Broil Marinade ▫️2-3 lb London broil (top round or flank steak) ▫️1/2 cup olive oil ▫️zest of 1 lemon ▫️zest of 1 lime ▫️1 tbsp lemon juice (about 1 whole lemon) ▫️2 tsp lime juice (about 1 whole lime) ▫️2 cloves garlic, minced ▫️1 tsp hot sauce Chipotle pepper base preferred ▫️2 tsp salt ▫️1 tsp black pepper 🔸Cilantro Gremolata ▫️1 yellow, red, or orange bell peppers roasted, skin removed, de-seeded, and finely minced ▫️1 tbsp lemon juice ▫️zest of 1 lemon ▫️1 bunch cilantro leaves finely minced ➖➰➖➰➖➰➖➰➖➰➖ Instructions: 1️⃣Combine all of the ingredients for the marinade in a gallon zip top bag and add the London broil. Remove the steak from the fridge and allow to come to room temperature a half an hour before you're ready to grill. 2️⃣Prepare your grill for high direct heat and allow it to preheat so the grill grates are nice and hot. Remove the steak from the marinade and shake off any excess. Place the steak directly on the grill. 3️⃣Allow the steak to cook for 6-8 minutes per side for a rare steak, cook for 8-10 minutes per side for medium, and cook for 10-12 minutes per side for well done. 4️⃣Remove the London broil to a large cutting board and allow to rest for at least 10 minutes before slicing thinly, against the grain. 5️⃣While your meat is resting, combine all of the ingredients for the gremolata in a small bowl. Rip off the large ball of silk from the top of the corn and any loose or hanging pieces of the husk. Place the corn directly on the grill grate, without peeling the husk off. Grill for 20 minutes, flip and cook for an additional 20 minutes. 2️⃣Remove the corn to a serving platter and allow the guests to peel their own corn before eating. The filling becomes so melty and ooey gooey, the chicken breast stays juicy and the bacon renders and crisps so that every single bite is this glorious party of every flavor working together. ➖〰➖〰➖〰➖〰➖〰➖ Ingredients: ▪️4 boneless skinless chicken breasts ▪️12 slices bacon 🔹Spice Seasoning ▪️1 Tablespoon Italian seasoning ▪️1 teaspoon smoked paprika ▪️1 teaspoon garlic powder ▪️1 teaspoon salt ▪️1/2 teaspoon black pepper 🔹Spinach Artichoke Filling ▪️4 oz cream cheese softened ▪️1/2 cup marinated artichokes with the brine chopped ▪️1/4 cup cooked spinach ▪️1/4 cup Parmesan cheese grated ▪️1/2 cup mozzarella cheese shredded ➖〰➖〰➖〰➖〰➖〰➖ Instructions: 1️⃣Preheat your smoker or grill to 350 degrees F for indirect cooking. 2️⃣In a medium bowl, combine all of the ingredients for the spinach artichoke filling. 3️⃣In a small bowl,combine all of the ingredients for the spice seasoning. Sprinkle liberally on all sides of the chicken breasts. 4️⃣On a large cutting board, slice the chicken breasts open, without slicing all of the way through the breasts. Spoon a couple of tablepoons of the filling mixture into each breast and fold them closed. 5️⃣Wrap each chicken breast with about 3 slices of bacon. Secure the bacon ends with toothpicks, if necessary. 6️⃣Place the chicken breasts on the smoker or grill, close the lid and cook until the internal temperature reaches 165 degrees F. Do you have left over pulled pork? You’ll definitely want to save this recipe for when you do! These Smoky Cuban Sandwiches are one of my favorite things to make with it. It’s made with layers of citrus seasoned pulled pork, peppery ham, and melty swiss. Then we bring in the killer flavor combo of dill pickles and robust mustard. All of this is then stuffed inside a loaf of crusty bread, pressed flat, and grilled to perfection. ➖✖️➖✖️➖✖️➖✖️➖ Ingredients: ▪️1 loaf French bread sliced in half lengthwise ▪️2 cups leftover pulled pork ▪️1/4 cup orange juice ▪️1 lime (zest and juice) ▪️1 tsb oregano ▪️1 tsp red pepper flakes ▪️1 tsp cumin ▪️1/2 tsp onion powder ▪️1/2 tsp salt ▪️1/2 tsb cracked black pepper ▪️1/2 lb thinly sliced deli ham (peppered) ▪️1/4 lb deli sliced baby Swiss cheese ▪️1/4 cup stone ground dijon mustard ▪️10-12 slices sandwich style dill pickles ▪️1/2 cup fresh cilantro chopped ➖✖️➖✖️➖✖️➖✖️➖ Instructions: 1️⃣Turn on your grill to medium heat and close the lid. Allow the grill to preheat while you butter the cut sides of your bread. 2️⃣Place the bread, buttered side down, directly on your grill grate and cook for 2-4 minutes until evenly toasted. Remove to a large cutting board that has been covered with a large piece of heavy duty aluminum foil. Place a large, heavy pan in your grill and close the lid. The pan will preheat while you prepare your sandwich. 3️⃣In a large saute pan, combine the pork, orange juice, lime zest and juice, oregano, red pepper flakes, cumin, onion powder, salt and black pepper. Warm over medium heat until the sauce is evenly distributed throughout the pork and everything is warmed through. 4️⃣Layer the mustard, pickles, cheese, ham, and pork across the toasted sides of the bread. Press the halves of the bread together and wrap as tightly as you can with the foil. 5️⃣Place the foiled sandwich on the grill and top with the heavy, preheated pan. Turn the temperature of your grill down to low and let the sandwich get all toasty and the cheese melted. Check the sandwich after about 10 minutes. 6️⃣Allow the sandwich to cool for 5-10 minutes before slicing into individual servings. Top with chopped cilantro.
