Use a spoon to clean out most of the seeds from the inside of the tomatoes without breaking through the skin or bottom. 3️⃣Season each tomato with salt and pepper and stuff about 1 oz of the fresh mozzarella into the tomato. 4️⃣Wrap each tomato in a slice of bacon and secure with toothpicks. Place the wrapped stuffed tomatoes onto a vegetable grill pan and onto the grill. 5️⃣Grill for 25 minutes, checking regularly to make sure the tomatoes are cooking evenly. HOW TO COOK THE PERFECT NEW YORK STRIP STEAK ➖✖️➖✖️➖✖️➖✖️➖✖️➖ Ingredients: ▪️2 Strip Steaks ▪️Coarse Kosher or sea salt ▪️coarse ground black pepper 🔸Garlic Thyme Compound Butter (optional) ▪️4 Tablespoons salted butter softened ▪️2 cloves minced garlic ▪️1 teaspoon Worcestershire sauce ▪️1 teaspoon fresh thyme leaves or ▪️1/2 teaspoon dried thyme leaves ➖✖️➖✖️➖✖️➖✖️➖✖️➖ 1️⃣30 minutes prior to grilling, remove your steaks from the refrigerator, season on both sides with the coarse salt and allow to come up in temperature. 2️⃣Preheat your grill to High heat. You're looking for temperatures around 900 degrees F on the grill grates. 3️⃣Combine all ingredients for the compound butter in a small bowl. 4️⃣Place one spoonful of butter directly on your serving platter underneath where each steak will be placed. Do this before you get your steaks on the grill so when they come off, you can set each steak on a spoonful of the butter. Set aside the remaining butter for the top of the grilled strip steaks. Place the steaks directly on the grill grates at a diagonal. For a medium rare steak, cook 2-3 minutes, then rotate 45 degrees and grill for 2-3 more minutes. 5️⃣Flip the steaks over, cook 2-3 minutes, then rotate 45 degrees and grill for 2-3 more minutes. Increase or decrease cooking time as needed to reach ideal internal doneness. For a rare steak, cook to 125 degrees F, Medium Rare to 135 degrees F, Medium to 145 degrees F, Medium Well 155 degrees F, Well Done to 160 degrees F. 6️⃣Remove the steaks from the grill and set each steak on the dollop of prepared compound butter. 7️⃣Let the steak rest for at least 8-10 minutes before slicing. Cook for 1-2 minutes until the flesh is charred, but still firm. Remove to a plate and allow to cool. 3️⃣Spread the softened butter on the sliced pieces of baguette and sprinkle with sugar. Place the sugared side of the bread down on the grill and toast for 1-2 minutes. Watch carefully so the sugar caramelizes, but doesn't burn. 4️⃣Once your bread is toasted, it's time to prepare the bruschetta. In a medium bowl, combine the strawberries, basil, balsamic, sugar, and pepper. It really has a lighter, more fragrant flavor. It is the real secret to the whole topping. If you don’t have it or can’t find it, regular balsamic will totally work fine! Classic BBQ low and slow cooking combines with punchy, tongue-tingling flavors to make your mouth real happy! ➖〰️➖〰️➖〰️➖〰️➖〰️➖ Ingredients: ▪️1 7-9 lb bone-in pork shoulder roast ▪️1/4 cup Wicked Sweet Bourbon Seasoning 🔸For the mop sauce: ▪️1 1/2 cups bourbon ▪️1/2 cup apple cider vinegar ▪️1/2 cup brown sugar ▪️1 Tablespoon crushed red pepper flakes ▪️1 Tablespoon Wicked Sweet Bourbon Seasoning ➖〰️➖〰️➖〰️➖〰️➖〰️➖ Instructions: 1️⃣Preheat your smoker to 250 degrees F, using hickory, apple, or maple for your wood smoke. 2️⃣Liberally season the pork shoulder on all sides with the Wicked Sweet Bourbon Seasoning. Place on the grill grates and close the lid. 3️⃣Pour all of the ingredients for the mop sauce in a medium saucepan. Bring the mop sauce to a boil and remove from the heat. Set aside. 4️⃣Mop the pork shoulder with the mop sauce every hour until the internal temperature of the pork reads 165 degrees F. This should take around 6-7 hours. 5️⃣Transfer the pork shoulder to a disposable aluminum pan and pour the remaining mop sauce over the top. Cover tightly with foil and return to the smoker. 6️⃣Continue cooking until the internal temperature of the pork reads between 201-203 degrees F or until the thermometer probe slides into the pork like it's softened butter. This step can take anywhere from 4-6 hours, that's the fun part about BBQ, it's done when it's done. 7️⃣Remove from the smoker and allow the pork to rest for at least 30 minutes before shredding, removing the bone, and separating the fat and gristly from the meat.
