  • Bookmark this Vegan Sticky Pecan Pudding for your next sweet tooth moment šŸ„„ It’s made with @FisherNutsBrand Pecan Flour and requires no added butter or oil.

This was my first experiment with Fisher’s Pecan Flour and it’s a beautiful flour that adds richness and flavour to any recipe. They’ve been working with nuts for 100 years, and their alternative flours are so easy to use in cooking and baking! P.S. you can use code 20PECANFLOUR on Amazon to save 20%. 

This sweet recipe a cross between pecan pie and sticky toffee pudding—it starts with a rich and flavourful pecan flour crust, has a pie-like filling sweetened with maple syrup + coconut sugar and lots of pecans to top. Vegan vanilla ice cream is optional, but highly recommended.

R E C I P E
⊹ 1 ½ - 2 cups Fisher Nuts pecan flour
⊹ ā…“ cup cashew butter
⊹ ¼ cup maple syrup
⊹ 1 tsp vanilla extract
⊹ ¼ tsp salt 

⊹ 12oz silken tofu
⊹ 1 tsp vanilla extract 
⊹ ½ tsp salt 
⊹ ¾ cup coconut sugar 
⊹ ½ cup maple syrup
⊹ 2 tbsp arrowroot powder
⊹ ¼ cup almond milk (as needed)

⊹ 1-2 cups pecan halves

M E T H O D
⊹ Preheat oven to 350F and line an 8x8 square baking dish
⊹ In a bowl, whisk together cashew butter, maple syrup, vanilla and salt until smooth. Add pecan flour and combine until a crumbly mixture forms, adding additional pecan flour as needed.
⊹ Press the mixture into the baking dish and evenly spread across the bottom, using parchment paper to press. Bake for 10 minutes then remove and set aside.
⊹ Blend all remaining ingredients except pecan halves in a high speed blender until smooth, adding the almond milk as needed to blend. Pour into the baking dish and bake for 25 minutes.
⊹ Remove the dish from the oven and sprinkle pecan halves over top. Gently press into the mixture and return to oven to bake for another 25 minutes. Remove and let set for an hour. It may be a bit jiggly but the mixture firms up as it cools.
