  • This yummy lemon cake's great when you're in a pinch (or even when you're not): 1. I used a boxed cake mix (Betty Crocker Funfetti) and followed the instructions on the back for 2 9-inch rounds. Threw in a handful of lemon zest to give it a kick. 2. To add moisture and tartness, I brushed each cake layer with buttermilk (optional step) 3. Topped with my easy go-to cream cheese frosting (one stick of butter, one 8 oz block of cream cheese, 1 cup of sifted powdered sugar, 1 tsp vanilla extract, beat with an electric mixer until smooth). 4. Decorated with lemon slices and shrubs of mint. For the slices on the edge of the cake, I sliced the lemon extra thinly with a mandolin so the slices would be flexible enough to fold over onto the sides. .
