We'll just leave this Miller and Carter, sticky chipotle chicken recipe here for you. Your taste buds will be thanking us later. 😊 Sticky Chipotle Chicken 4 portions as a good starter 500g of chicken thigh meat cut in to bite size pieces (breast could be used but thigh has a better flavour and stays moist) 1tbs of Sake, sherry could be used 1tbs of white sugar 2tbls spoons light Soya sauce 50g of grated fresh ginger 4x cloves of garlic grated 1x large egg 40g potato starch Vegetable oil for deep frying Sticky chilli Chipotle sauce 150grm sweet chilli sauce 150grm store brought Chipotle 20g dark brown sugar, Demerara will do fine. 2tsp toasted sesame seeds, keep some for decoration On a clean board cut the chicken in to bite size pieces and place in a bowl. Add the sake, white sugar, soya sauce, ginger and garlic. Mix together and cover the bowl and place in the fridge for a minimum of 2 hours before you are ready to serve. When ready to serve, add the egg and again mix, then add the potato starch and mix thoroughly again. Have the oil at 170oc and ready for frying, add the chicken to the oil carefully so it does not splash. Cook for 5-7 minutes until crispy and cooked. Make the dressing by adding all the Sticky chilli chipotle ingredients together, keeping some of the sesame seeds back for garnish. Once the chicken is cooked drain and place in a bowl, add the sauce and toss. Place into the serving dish and garnish with the remainder of the sesame seeds. This can be served as a starter, side dish or even in a sandwich. Don't forget, you can purchase a Miller and Carter gift voucher as a perfect IOU for when we reopen, via our website. 👍🍸
Thinking about a mouth-wateringly rich, custard dessert topped with a contrasting crunchy layer of caramelised sugar? We can help. You're welcome @millerandcarter Classic Crème Brûlée fans. 🍮 Crème Brûlée (6 portions) 100mls Milk 300mls Double Cream 3 drops Vanilla Essence or the seeds from a Vanilla pod 4 Medium eggs 25g Caster Sugar For the Glaze on top: use either caster sugar of Demerara sugar Warm the milk, Cream and Vanilla (either the essence or the Seeds from the pod) in a pan. If using the seeds from the pod, place the pod on a chopping board and cut through length wise, scrap out all the seeds and add to the milk and cream mix In a clean bowl whisk the eggs and sugar together, pour over the warm milk and cream mix through a fine sieve. Pour the completed mix into individual dishes. Place the dishes in a tray half filled with water. The water must come up to half way up the dishes and place in the oven at 160oc for 30-40 mins, or until the egg mix has set. Remove and and place on a wire tray until cold. Place in the fridge until ready to serve. When ready to serve remove from the fridge and sprinkle the tops with sugar, and then using a blow torch caramelize the sugar. Hold the flame just above the sugar and keep moving the flame till the sugar is done. Variations of the cream can be made by putting sliced fruit or chocolate chips at the bottom of the dish before the egg and cream mix is poured in. Finally....enjoy! 😀
