Cucidate is an Italian Fig Cookie. This is made with regular flour and sugar and is a real treat. My grandfather from Sicily, (my favorite grandparent) grew his own fig tree. The week before he died in early December years ago, he kept worrying about his fig tree getting covered, referring to it as a “she.” She’s a gonna die if we don’t cover her.” That Saturday he died in front of me. I was the only one home as my brother ran to the neighbor for help. He ate a good lunch and he sat on the chair in the kitchen and passed away. No suffering. No prolonged death, and with his favorite person in the world. What a gift God gave him, although I cried for days. Every time I think of figs, he comes to my mind. A few years back we got to visit his little town in Sicily. High up in the mountains, Isnello’s elevation in second to Mount Aetna. The family was beautiful and owned the pizza restaurant. They also worked in the special police force going after the bad guys. I felt a swelling of pride knowing these roots. He didn’t have to come to America. He chose it for the adventure and although he was a shepherd of sorts, he nabbed my sophisticated, gorgeous younger grandmother, still a mystery to me. They both had a hearty, adventurous spirit doing things that would seem impossible (based on their childhoods). Christmas is a time to remember the people you love, who are no longer here. This month, I’m coming up on ten years of food blogging and I’m writing my favorite recipes from 2018. Out of 100 recipes, I have a few favorites and this is one of them. Easy, flavorful and inspired from a favorite San Francisco restaurant. It’s spicy, salty and a bit umami. Lately I’m reflecting on this life as a food blogger. How do I keep expanding, evolving and how do I stay ahead of the fast moving changes influencers have to deal with. Blogs may have started out like personal journals, but have evolved to solve problems, bring information, influence buying decisions. Collectively, they are a big deal. I contemplate this on a near daily basis. What am I bringing to the table. (literally and figuratively). I want to be authentic with who I am, how I eat, how I live, what’s important to me. It’s not just food. Food is not my life. But, food is a big part of my life. Behind all the pretty food is a life with a husband and a big connection to the twins, two cats, one dog, and most importantly Jesus. On my blog’s about page, at the very bottom I have these words. My Faith - Jesus Christ saved my life and gave me something to give to the world. Faith, Joy, Love. A Passion for Good Food, a heart to share it. I can’t remove these words, as I believe I owe everything to God. Every single time my husband prays, he asks God to direct our steps. I used to think this was a rather mundane prayer, but then I realized, this is one of the strongest most powerful daily prayers there can be. If God the all-knowing, all-loving father directs our steps, we will do what is right, what is just, what is fair, what is creative. what is good for us and good for the world. It’s how we can make the tough decisions. I tell the twins when they get on the bus in the morning. “Don’t be what’s wrong with the world. Be what’s right with the world.” Well, that’s a feat impossible without God directing their steps. My prayer this December is that God directs all the steps I take on this blog, that I’m serving Him in what I do. I’m resurrecting the stuffed pork chop (from the 70”s?) with a new twist: Spinach, sausage, shallots, mushroom stuffing. 👩🏻🍳The only thing I forgot to do was brine my chops which is a must in today’s “let’s make lean pork” which is such disappointment. I want fatty pork chops. Who’s with me?😍 The magic of this recipe lies in the savory blueberry pear shallot compote. As soon as I polish up my recipe, I’ll post. You could also stuff chicken breasts with this combo, but do include this delicious compote I discovered years ago in an Italian magazine. Recipe below. Heat 2 tablespoons butter in medium pan. Add shallots, pear and blueberries until cooked through about one minute. 2. Add dry vermouth, sugar, cinnamon, dash salt. Bring to boil, reduce heat to low, continue to cook for about 6-8 minutes, and mash to make a compote consistency.
