If you’ve ever been to picture-perfect Diablo Lake in North Cascades National Park, you may have gotten a peek at the North Cascades Environmental Learning Center tucked away on the wooded shore. The green-built campus is operated by North Cascades Institute, an environmental education nonprofit that teaches people of all ages about the nature around us—so that we may all become better stewards of our planet. 🌎 The Institute’s commitment to the environment aligns perfectly with ours, and we are excited to support them with a portion of proceeds this week. We're excited to introduce you to Rwanda Nyarusiza. 🤩 This single-origin coffee is reminding us of molasses, navel orange, and butterscotch. Nyarusiza is one of two washing stations run by Buf Cafe, an organization known for exemplary quality and many Cup of Excellence wins. The washing station processes coffee from somewhere in the neighborhood of 700 producers who grow their coffee in the surrounding lush mineral-rich hillsides. This 100% Bourbon lot was first sorted by floating before being pulped, dry fermented, and then dried on raised beds.

Sometimes it's good to switch things up like trying a single-origin instead of a blend or using a v60 instead of a drip brewer. 👀 Our newest single-origin, Kenya Ichamama, can help you do both! V60 brewers might take a tad longer than your normal morning routine but it also can bring out tasting notes in the coffee that you could be missing. Below we have a simple v60 recipe for you to try at home that will take less than 10 minutes to complete! ✔️ Don't forget to save this post so that you can easily reference it next time you're ready for a warm cup of coffee. ✨ Hario v60 Brewer Recipe ✨ We recommend using a burr grinder, Hario v60 brewer (and filters), a gooseneck kettle, scale, and timer. 1. Start by heating the water to 205°. 🔥 Insert a filter into the brewer and place it on your cup. Pour some water through the brewer to rinse the filter and remember to discard this water from the cup. 2. Weigh out 20 grams of whole bean coffee and grind at a medium-fine grind setting. Pour the ground coffee into the filter and settle it. Put the brewer and cup on the scale and tare the scale. Start the timer and pour 40g of water.💧💧💧 3. When the timer hits 30 seconds, add 100g more water (the scale will read 160g). Pour in a circular motion and try to cover the entire brew bed evenly. 4. When the timer hits 1:10, add 200g more water (the scale will read 340g) and gently swirl and settle the brewer to ensure the water is draining through an even coffee bed.💫 The timer should be between 3:30 and 4:00 when the coffee fully drains from the brewer. 5. Pour the coffee into your favorite mug and enjoy! ☕️

Kenya Ichamama ☕️ ☀️ This offering comes to us from the Ichamama factory, named for the nearby Ichamama river in the celebrated growing region of Nyeri. Ichamama is part of the Othaya coop, which represents about 700 coffee producers in the area and has its own dry mill operation in Gatuyaini. Producers here generally cultivate around 250 trees on half-acre plots. This is a citrus-laden Kenya with layers of bright juicy flavors and rounded sweetness in the finish. We taste notes of grapefruit, lemon, vanilla, bergamot, and chamomile.
