Lentil Curry served with our Mango Chilli & Coconut Chutney! 😍 This meal was created by @lifeof_bronwyn, who kindly shared all the details... “Chop a large onion, a chunk of ginger, a fresh chilli and a few cloves of garlic in the food processor. Fry in a little oil until soft. Then grate in some fresh turmeric. Meanwhile, process four or five large ripe tomatoes and then add to the onion mixture. Drain and rinse two tins of brown lentils and add to the pan with a cup of water. Simmer until the water has mostly evaporated and the lentils are cooked. Remove from heat and stir through some coriander leaves. I served it with rice and naan, more coriander leaves and Roza’s Gourmet Mango Chilli & Coconut Chutney”.
