Doesn't this feel like the hottest heatwave to hit London in years? A few days ago I literally saw a man sitting in a chair sunning himself at a roundabout, I'm not sure if he'd stopped mid drive, or if he just liked the noise. Whatever his reasons, he too is clearly melting in this heat. So we're really wondering why more people aren’t making this glorious personal air-conditioner of an iced snack. Maybe, you just didn't get the recipe. Maybe you're now feeling cranky as this unprecedented heat wreaks havoc on your nerves, and the air con in the office just isn't working. Maybe you just want us to share the recipe with you now. You will need: 1 large English cucumber, rinsed 250ml water 85ml freshly squeezed lime juice (from about 2–3 limes) 100g granulated sugar Leave the skin on the cucumber. Cut off the ends and slice the cucumber thickly. Put the cucumber and water in a food processor and blend to a fine purée. Strain the purée through a fine sieve and add the lime juice and sugar. Stir until the sugar has dissolved. Pour the mixture into the ice-lolly moulds, leaving 5mm at the top to allow the mixture to expand when it freezes. The heatwave continues. Well, the grass is starting to look a little sad and brown but we're still not complaining. In fact, all the more reason to come home early from work and get creative with this Strawberry, Pepper, and White Chocolate Ice Lolly recipe. + The bite of black pepper in a fruit lolly is very interesting, but wearing a cap of white chocolate is truly inspired. You'll need: + + 50g granulated sugar 3 tablespoons water 450g strawberries, rinsed, hulled and cut in half a squeeze of lemon juice 30 black peppercorns, freshly ground pepper + + Put the sugar and water in a small saucepan over medium heat and bring to a simmer. Simmer until the sugar has dissolved. Put the strawberries in a food processor and blend to a purée. Add the sugar syrup, lemon juice and pepper and blend again. Pour the mixture into the ice-lolly moulds, leaving 5mm at the top to allow the mixture to expand when it freezes. Insert a lolly stick and freeze. Thank you @glance_productions for the amazing video

Usually we make these beautiful ice lollies at one of our dip and create events, but good news, you can also make it yourself at home! First step: buy a supply of our strawberries and cream ice lollies. Next, melt some chocolate on the stove and, once cooled fill into an empty squeeze bottle. Now, squeeze the melted chocolate all across lolly, and scatter with a selection of summer berries and nuts.
