At Chi Wei, dumplings for days, steamed or fried, handmade when you order by a Cantonese cook married to a man from Shandong. She tailors the northern Chinese jiaozi for the southern Chinese palate. Wrappers are thinner, silky, not doughy, and the fillings of pork with chives or cabbage are finely shredded to add textural contrast. They are served with an oil dip that’s tingly with ma la Sichuan pepper but not spicy hot—again, conforming to local Cantonese tastes. Lines of locals out the door every night!
